In 2019, the Berwick and District Show will celebrate 170 years, what an amazing achievement. Steeped in history, the Berwick Show is evolving and accommodating our changing community and this event showcases our deep history and reminds us all of the way it used to be 170 years ago. Through this Competition Schedule for 2019 you all continue to embrace the past and show the modern day

DELIVERY & COLLECTION TIMES: Craft & Cooking

1. The Craft & Cooking Pavilion will be open from 8.30am to 7.00pm (SHARP) on Wednesday 20th February 2019, to except all exhibits.

ALL EXHIBITS MUST BE IN PAVILION BY 7.00PM.

LATE ENTRIES WILL NOT BE ACCEPTED

2. All exhibits must remain on display during the show. The Pavilion will close at 4pm on Sunday 24th February, and Exhibits must be collected between 5.00pm - 6.00pm [SHARP) on this day.

IT IS THE RESPONSIBILITY OF THE EXHIBITORS TO COLLECT THEIR EXHIBITS ON THIS DAY.

THE SOCIETY WILL TAKE ALL CARE, BUT WILL NOT BE RESPONIBLE FOR ANY LOSS OR DAMAGE TO THE EXHIBITS. ALL EXHIBITS ARE AT THE SOLE RISK OF THE EXHIBITOR

SHOW COOKING HINTS- READ SCHEDULE CAREFULLY -

CAKE SIZE – No cakes should be more than 25cm in diameter unless specifically stated.

Chocolate Cake – Fine soft texture. Blend cocoa with a little hot water and cool before adding to mixture.

Chocolate/Apricot Balls – Place on appropriate plate/bowl size

Orange Cake – Fine even texture, even golden brown surface, well flavoured with orange. Rind can be used.

Cup Cakes – Moist, fine texture, nice peak to rise above paper.

Plain Sponge – No butter. Two layers of identical thickness, weigh each tin to obtain same amount in each. Should be pale in colour, light and soft in texture, not sticky and no cooler marks.

Scones – Dainty 5cm rounds. Uniform shape and colouring, free from excess flour. DON’T screw cutter, select scones from the first rolling of dough.

Fruit Cake – Cut all fruit to size of a currant. Square tins with straight sides to be used. Paper lining 5cm above tin, use hands to mix ingredients. Don’t scrape sides of bowl and put last bit on top of cake mixture. Too hot an oven causes cracks, wrap cake in tin foil immediately after taking cake from oven and allow to cool. Remove cake from tin next day and re-wrap in foil to store.

Bumping tin on table a few times helps remove air bubbles before cooking for fruit cakes and plum puddings. Make 21 days before Show.

Jams – Jars of Jam must have preserve covers only not screw top lids

– Ensure that any mould and any black sticky rings or marks have been removed.

– Ensure jars are filled to near capacity level.

– Attend to details like presentation of jars - making sure that jars have been cleaned, old sticky labels removed etc.

The following recipe is compulsory for all entrantsin this section.

RICH FRUIT CAKEINGREDIENTS: 250g (8oz) sultanas 1⁄4 teaspoon Grated Nutmeg250g (8oz) chopped raisins 1⁄2 teaspoon Ground Ginger250g (8oz) currants 1⁄2 teaspoon Ground Cloves125g (4oz) chopped mixed peel 250g (8oz) butter90g (3oz) chopped glace cherries 250g (8oz) soft brown sugar90g (3oz) chopped blanched almonds 1⁄2 teaspoon vanilla essence1⁄3 cup sherry or brandy 1⁄2 teaspoon almond essence250g (8oz) plain flour 1⁄2 teaspoon lemon essence60g (2oz) self raising flour or finely grated lemon rind4 large eggs

METHOD:1. Mix together all the fruits and nuts and sprinkle with sherry or brandy.

Cover, leave for at least 1 hour, but preferably overnight.2. Sift together the flours and spices. Cream together the butter and

sugar with the essences. Add the eggs one at a time, beating well after each addition, then alternately add the fruit and flour mixtures.Mix thoroughly. The mixture should be stiff enough to support a wooden spoon.

3. Place the mixture into a prepared tin 20cm square, straight sided, square cornered tin and bake in a slow oven for approximately 31⁄2 – 4 hours. Allow the cake to cool in the tin.

NOTE: To ensure uniformity and depending on the size, it is suggested the raisins be snipped into 2 – 3 pieces, cherries into 4 to 6 pieces and the almonds crosswise into 3 or 4 pieces.

CLASS 8902

VAS CARROT CAKE Entry Fee: $2.00

Competitors to only use the recipe below. PLEASE NOTE: VAS State Carrot Cake Competition Change of Recipe.

The new recipe as recommended by Geoff from Rocky Lamattina’s that the Good Foods Australia award winning recipe is the recipe used for the State

Carrot Cake competition.

PLEASE NOTE: The glaze has been removed from this recipe.

Every entry to this class at show level must use this recipe.

INGREDIENTS:375g Plain Flour 2 tsp Baking Powder11/2 tsp bicarb soda 2 tsp ground cinnamon1/2 tsp ground nutmeg 1/2 tsp allspice2 tsp salt 345g castor sugar375ml vegetable oil 4 eggs3 medium carrots, grated (350 grams)220g tin crushed pineapple, drained180g pecan nuts crushed

METHOD:

1. Preheat the oven to 180C (160C fan), Grease a 20cm (8”) round cake tin and line with baking paper.

2. Sift the dry ingredients together into a bowl. In a separate bowl, beat the eggs and oil, then add to the dry ingredients. Mix well then add the carrots, crushed pineapple and pecans.

Mix to form a smooth batter and pour into the cake in.

3. Bake for approximately 90 - 100 minutes.

4. Remove from the oven and allow to cool for 10 minutes in the tin on a wire rack. Upend

JUNIOR BOILED FRUIT CAKE COMPETITION

Entry Fee: $1.00 Money: First $10.00 2nd $5.00

The following recipe is compulsory for all entrantsin this section.

INGREDIENTS:

375g (12oz) Mixed Fruit 2 eggs lightly beaten3⁄4 cup brown sugar 2 tablespoons marmalade1 teaspoon mixed spice 1 cup self-raising flour1⁄2 cup water 1 cup plain flour 125g (4oz) butter 1⁄4 teaspoon salt1⁄2 teaspoon bicarbonate soda 1⁄2 cup sherry

METHOD:

1. Place the mixed fruit, sugar, spice, water and butter in a large saucepan and bring to the boil.

2. Simmer gently for 3 minutes, then remove from stove, add bicarb soda and allow to cool.

3. Add sherry, eggs and marmalade, mixing well.

4. Fold in the sifted dry ingredients then place in a greased and lined 20CM ROUND CAKE TIN.

5. Bake in a moderately slow oven for 1.5 hours until cooked when tested.

CLASS 8904

JUNIOR CARROT AND DATE MUFFIN

COMPETITIONEntry Fee: $1.00

Prize Money: First $5.00

Junior cake bakers under 18 on the day of the show

The following recipe is compulsory for all entrantsin this section.

Show Entries: Four (4) muffins per plate

INGREDIENTS:

21⁄2 cups Self-raising flour 1 teaspoon ground cinnamon1/4 teaspoon ground nutmeg 1 cup brown sugar (firmly packed)1/3 cup pitted dates, chopped 1 cup coarsely grated carrot1 tablespoon orange marmalade 1 cup canola oil2 eggs, lightly beaten 3/4 cup orange juice1 cup reduced fat milk

METHOD:

1. Heat oven to 190C (moderately hot)

2. Line a 12 hole muffin pan with, Round Paper Muffin Cases

Classic White Muffin Cases size (35mm height x 90mm wide x 50mm Base)

3. Sift dry ingredients into a large bowl; stir in dates, carrots. Then add the combined marmalade, oil, eggs, juice and milk. Mix until just combined

4. Spoon mixture evenly into Muffin paper cases in muffin pan

5. Cook for 20 minutes, (to test muffins are cooked inserted cake skewer. If it comes out clean the muffins are ready

6. Stand muffins in pan for 5 minutes before removing to cool

GENERAL REGULATIONS

VAS LTD STATE COMPETITION GENERAL REGULATIONS

1. An exhibitor may represent only one Society at Group level and one Group at State level.

2. An exhibit may only win one Group Final in a show season, should the same article be entered again and found to have already won a Group Final in the same show season the exhibitor must return the prize money and will be disqualified from exhibiting for 12 months.

3. The Melbourne Group winner of the current Show will compete as a finalist in the following State Final at the Royal Melbourne Show.

4. An item having won a State Final is no longer eligible to compete in the competition.

5. Each item entered must be the bona fide work of the exhibitor.

6. If for any reason a winner is unable to compete at Group or State Final level then the second place getter is eligible to compete.

7. A person will not be permitted to win at more than one Show within the State in any one Show year. Persons not adhering to this rule will be required to forfeit/refund prize money.

8. All work is to have been completed within the last twelve (12) months.

ALL SHEEP MUST STRICTLY BE BRED BY EXHIBITOR. REGISTERED SHEEP NOT ELIGIBLE FOR ENTRY.

LIMIT OF TWO ENTRIES PER CLASS, PER EXHIBITOR.

1. SHEEP HEALTH DECLARATION is a requirement. All Exhibitors are required to sign a declaration regarding Johne’s Disease & Footrot (Sheep Health Declaration) form. This must be included with the Official Entry Form and must be signed by the Exhibitor; otherwise sheep cannot be accepted on the Showgrounds. All sheep may be inspected at the Sheep Committee’s discretion to ensure they are not infected with footrot or any external parasite. If any are found to be infected, they will be removed from the Showgrounds immediately. All sheep that are exhibited must be in good acceptable condition.

2. Any exhibitors who are Ovine Brucellosis Accredited should include a photocopy with their entry form for penning purposes.

3. A signed Declaration stating JOHNE’S DISEASE is not known or suspected, or known to exist on the property from which the animal was derived, during the period five (5) years immediately prior to movement is a requirement.

4. All sheep are to have a PIC tag in the ear.
