The Chefs

What is Benedict?

Fernando Sindu and his new comrade, Head Pastry Chef Charins Chang, started their careers on the opposite ends of the spectrum but share the same strong passion for cooking. Chef Fernando studied at the Culinary Institute of America, before landing a Sous Chef position at the Boqueria Restaurant in New York City. Chef Charins worked in biochemistry before deciding to pursue her dream - she then did a summer at a French pastry school and returned to Jakarta, selling her creations online to a distinguished crowd.

Benedict is a gourmet café specializing in all day breakfast and great coffee.

Done by The Union Group in collaboration with chefs Fernando Sindu and Charins Chang, Benedict’s food menu is the perfect balance of comfort and innovation. Using the highest quality and freshest ingredients, we bring to the table classic brunch staples with a novel, creative twist.

The same goes with Benedict’s coffee offering: group barista Day Hendratno uses only the best beans, equipment and techniques to achieve that ideal cup of joe. We want to keep things fun for the novice coffee drinker though, so we also pride ourselves on original and delicious coffee creations.

HOW TOPOACHAN EGGThe perfect poached egg is a joy, and amazingly versatile – pop one on top of a salad, to dress up a bowl of noodles or drizzled with pesto. It is also of course, the superstar in an Egg Benedict. Here’s our expert tips in getting that silky, easily pierced white, and golden, gooey yolk:

Tips.

Make sure your eggs are really fresh – the yolk should stand up and the white shouldn’t be watery

Never season the water with salt because this will cause the egg white to break up and go wispy

When poaching multiple eggs at once, make sure the pot is large enough and add 30 seconds of cooking time for each extra egg

Crack eggs individually into a ramekin or cup.Fill a pot about two-third full with water and add a small dash of vinegar.Bring the water to a boil, then turn down the heat and let the water settle into a simmer.Create a gentle whirlpool in the water with a whisk.Slowly tip the egg into the whirlpool, white first. Leave to cook for three minutes.Remove with a slotted spoon, and pat dry with a paper towel.

So don’t settle for single-serving yogurt, dry toast and instant coffee. Here at Benedict, we elevate breakfast with a little imagination and a whole lot of hard work behind the scenes. Oh, and we serve it all day—because what’s more fun than

breakfast for dinner?

Our namesake dish, the Eggs Benedict, is something we’re really proud of. We make everything ourselves, from scratch - house-smoked beef bacon, pickled red onions, and the pièce de résistance: our velvety hollandaise sauce. The classic never goes out of style, but we like to keep things interesting – the Japanese Benedict with dynamite hollandaise is pretty genius,

if we say so ourselves.

This time we’ve added an Australian-style breakfast classic: the Avocado Toast. Beautifully ripe local avocados are smashed and seasoned perfectly, put on a slice of pesto brioche and topped with a jiggly poached egg and cherry tomatoes. Healthy yet completely satisfying. But if you’re after something more substantial, the Steak & Eggs with hanger steak, chimichurri

and fried eggs is a perennial favorite.

The ideal breakfast should symbolize hope; that today will be better than yesterday.

The new Benedict Coffeebar brings to the fore our bigger and better coffee programme.

In the centre of that is the Benedict Blend: custom-made especially for us, it is 100%

local, made with beans from Toraja, Dolok Sanggul, and West Java. An espresso Arabica blend, it is full bodied with medium sweetness and medium to high acidity. It boasts a smooth finish as well as beautiful aromas of caramel, dark chocolate, grape, and a hint of wine.

The Union Group’s Head Barista, Day Hendratno, created the Es Kopi Lokal as his personal take on the city’s favorite es kopi susu. Incorporating cream and gula melaka into shaken espresso made it a lip-smacking favorite, served in the charming and instantly recognizable green enamel mug.

Another sure win is the Waterfall Ice Coffee - caffeine jolt from a shot of espresso, rounded sweetness from condensed milk and cold, silky coffee jelly. No better way to wake yourself up.
