Welcome to the New Year edition of Bee Local Magazine

HelloDo you like the title of your latest edition, new year, new you?

I wonder how many of you have made a resolution and how many of those are in the top 10 (see page 16). Mine is to not work so many hours and to take Spuddy out for longer walks (pic on page 40).I hope the article on resolutions inspires you to stick at whatever it is you want to achieve, my top tip for this would be to remember that every day is a new chance to get it right so don’t give up.

I had a lovely chat before Christmas with reader Valerie, so I just wanted to give her a special hello and thank her for giving me a call, it was a real pleasure.

As always, I would love to hear from you, write, phone, tweet, facebook and please send me your events for the what’s on guide. Happy New Year. Andrena

‘I’ve dropped 5 dress sizes and Four and a

Half stone’says Norma who lives near

Heath & Reach

The other day my sister came to visit. We’d not seen each other for months but when I opened the door she stared in amazement. ‘Goodness Norma, you haven’t half lost weight.’ she studied me as I led the way indoors, ‘And you’re morphing into a different shape – even your legs…’I couldn’t help smiling a bit smugly. I’ve been overweight for fifty years. Even as a teenager I was miserable because I couldn’t fit into the little mini-skirts that were fashionable then. I came from a big family and mum filled us up on piles of potatoes, dumplings and bread. By the time I was 19 I weighed 18 stone.Over the years I tried every diet going. Then slimming clubs. Nothing worked. I’d lose about a stone, then it all went back on again. The crunch came last spring. I was 23 stone, size 32, could hardly walk, my joints were buckling and I’d lost an inch in height due to ‘compression’ the nurse said. I sat in the kitchen aching all over and I thought: ‘Is this all there is and then I die?’ and suddenly a defiant little voice inside went: ‘No! I’m not having that!’I’d read about the Virtual Gastric Band and I thought, I’ve tried everything else, I might as well

give it a go. I’m so glad I did.

The hypnotherapy sessions were really relaxing, I could eat whatever food I wanted and there was constant encouragement and support. The weight just fell off me. Now I’ve given all my old tent clothes to charity. I’m size 22 and aiming for 18. I’ve got rid of 63lbs of flab, but best of all, I’ve got my life back.’

Bedfordshire lady Christina Slough launches her debut novel

At the age of 11, her junior school teacher told her mother that she would be wasting her life if she didn’t become an author. but it wasn’t until her Californian honeymoon in 2012 that the bug to write became too difficult to ignore. She finally gave up her West London property job when her son, Lucas, was born in October 2013. Cristina was told to sleep when the baby sleeps. She never could. After getting to grips with her new role as a mother, she began writing. After one false start, she embarked on her debut novel ‘Till Death us Do Part’.Cristina is married to Adam, who runs a successful business; to-gether they share their Bedford-shire home with their son, crazy white German Shepherd and three spoiled cats. In the last week before Christmas, the Giving Tree 2015 appeal was a huge success at the Leighton Buzzard branch of Morrisons.

On the 14th, 15th and 16th of December, KidsOut volunteers and employees met outside of the Leighton Buzzard store to encourage shoppers to purchase a toy for a child living in refuge in addition to their holiday shopping.

The KidsOut team was overwhelmed by the generosity of passers-by, taking £100s worth of toys back to the charity’s head office in Leighton Buzzard. Gordon Moulds, CEO of KidsOut, said: “A response like this one really strengthens one’s faith in human-ity. The kindness of strangers can make a huge difference in the lives

of these children, who because of their situation are so vulnerable.”

Having kicked off in October, the KidsOut Giving Tree appeal encourages businesses and individuals to donate toys to children in refuge, many of whom may otherwise not receive any. While parents all over the country can purchase dozens of gifts for their kids, those living in refuge may not be able to afford to buy or cope with the process of shopping. Having already left their home, toys and all that is familiar, KidsOut believes that

these children deserve a happy Christmas.

Stewart Moulds, Head of Fundraising at KidsOut, said: “These children have got nothing. Some of them leave home with literally the clothes on their back, and they’re in the refuge with nothing at a time of year when other kids gets lots. We want them at least to have some

excitement at Christmas and fond memories to look back on.”

Designed to be a fun alternative to the more traditional Secret Santa, some 143 businesses, schools and individuals signed up to partici-pate in Giving Tree 2015, nearly tripling last year’s figures.

Morrison’s Leighton Buzzard branch continues to be a great

supporter of KidsOut, with employees involved in the KidsOut Community Committee and sponsored fundraising events. The KidsOut appeal coincided with Morrisons Stores special reduction on a majority of their toys. Katharine Smith, Community Champion for Morrisons in Leighton Buzzard and member of the KidsOut Community Committee, said:

“Morrisons is committed to supporting the local community, and our calendar is always packed with local initiatives. I think that most people like to help others at this time of year, and KidsOut is a lovely charity.”

More than 8,000 children are estimated to be relocated each year due to domestic violence, which is believed to affect as many as 25% of all children in the UK. Through its Toy Box service KidsOut works the whole year to provide toys for children moving out of refuge, but developed the Giving Tree initiative to reach those still in temporary accommodation during the Christmas season.

Kidsout is based in Leighton Buzzard, your local charity with national impact.

Choosing the right GymIt is not really about choosing the right gym, it is about choosing the right gym for youLets face it you have as much choice in gyms now as you do picking out washing up liquid in the supermarket. But which one is right for you?

The Right Environment When January 1st ticked around you, like so many others, might have felt that sudden urge to get in shape, lose weight, improve your health or just generally be more active. With the abundance of choice out there how do you decide what is the right fit for you? Realistically the fundamental place to start from is do you feel comfortable in the gym environ-

ment. Not every gym offers the same welcome, service or envi-ronment and you should feel at ease as soon as you walk through the door. Without that level of comfort in your surroundings the likelihood is that you won’t use it to its full potential.

Whilst deciding what gyms to visit, take a moment to ask yourself what you would like to achieve from using one. If you are looking to run a marathon in the next year, would a weights based gym be ideal for you? Probably not. If you are looking to lose weight, does the gym you are looking at specialise in that area? Does it have trainers that can assist and support your goals or does it gen-erally leave you to go about your business on your own. You may find it more motivational know-

ing that the trainers are there to fully support you throughout your journey, not just a superficial meet and greet service.

Value Over CostIn recent years there has been a boom in low priced and budget gyms, all looking to massively boost their numbers to turn over a profit. But just because a gym is cheap

it doesn’t mean that it offers more bang for your buck. Gyms

that potentially charge more but offer a better service and support will often provide you with A LOT more value for money in the long run than a cheap gym you attend for a month or two and not really make any changes to the way you look or feel.

Do you have a specific goal you want to get to? If not, before you choose to join a gym consider finding a goal! The value in your gym membership will be a lot greater if you are working towards an end result that you feel sup-ported in and give yourself the best opportunity to achieve those results.

At the end of the day, the gym is a place for you to relax and spend your free time at, make sure you are going with a clear purpose in mind and that you feel motivated, comfortable and happy in your surroundings.

ResolutionsBee Local Magazine asked Thrive Consultant, Garry Higgins to give us the insiders know-how on keeping New Year’s Resolution

The UK’s Top Ten Resolutions

1. Get fitter and healthier 2. Drink less alcohol3. Lose weight 4. Get out of debt5. Stop smoking 6. Find a new job/change career7. Spend more time with friends/family8. Start my own business 9. Travel more10. Find LoveSource: A poll of 1,700 adults in the

UK by Angels Den

Will you achieve your goals and dreams in 2016?

In my work as a Thrive Consultant I help people with all sorts of limiting beliefs, phobia’s and debilitating conditions such as depression. I often find that when I’ve helped someone get over a major problem that has been holding them back they feel liberated and want to live life to the full, they set themselves new and challenging goals. Similarly many of us at this time of year think about changes we would like to make, but give up after an initial burst of enthusiasm and good intentions, so how can you achieve your goals and make sure you succeed instead?

1 Write down your goal I’m sure you have heard this before, but writing down your goal makes it more likely that you will achieve it. Research by Dr. Gail Matthews at Dominican University shows that you are 42% more likely to achieve your goals by writing them down!

2 Positive self talk Pay attention to the voices in your head (we all have them!). If you have negative self talk then this will seriously limit the chances of achieving your goal. For example if you are constantly saying things

like “I’m stupid, lazy, clumsy or I never succeed at anything” then you are creating a set of limiting beliefs that will hold you back. Imagine that you are talking to a friend be positive, kind and compassionate to yourself with your inner voice.

3 Daily focus make sure that you are doing something everyday that takes you towards achieving your goal. Set yourself a target to achieve the next day before you go to sleep, write it down and that is your task to complete the following day.

4 S.M.A.R.T. make your goals SMART (Specific, Measurable, Attainable, Realistic and Time-bound).

5 Recognise your progress Keep a daily journal of things that you have done that are taking you towards your goal. Reviewing and processing your achievements will help keep you on track when you may feel down or that you aren’t getting anywhere.

6 Find helpSeeking expert help, guidance and encouragement can help you keep focus and provide additional resource and skills to help you achieve more than you thought you could.

7 Believe and PersevereNever give up! If it is important to you, really commit to your goal and have complete conviction that you will achieve it. Research has shown that if you absolutely BELIEVE that you can achieve change you will put in more determined effort to succeed.

Aristotle said : “Happiness is the meaning and the purpose of life, the whole aim and end of human existence” By taking action to achieve our goals and dreams we are taking steps towards achieving true happiness. I’ll leave you with another pearl of wisdom from Aristotle:

“We are what we repeatedly do.

Excellence... is not an act, but a habit”

gardenGardening Advice from

Gill Gallon, Potash Nursery www.potashplants.co.uk

Another New Year and soon we will see snowdrops, winter aconites and Iris reticulate starting to appear. And what better way to counter all that Christmas excess but to get out in the garden with a physical and productive work out.

Helleborus are always a welcome sight in late winter and early spring

when their nodding bell-like flowers start to show through the evergreen foliage and fill the garden with shades of white, pink and rich plum purple. Sometimes known as the Christmas or Lenten rose, it is the jewel of the Winter garden with their frost resistance making them a popular choice of plant for this time of year. Favourite garden varieties include, Helleborus foetidus, Helleborus niger and Helleborus hybridus although there are approximately 20 species of this herbaceous, evergreen, perennial flowering plant. All hellebores are woodland plants which enjoy a shady, damp spot. They’re largely untroubled by pests and diseases: just trim off old leaves in late winter to expose the emerging buds so you can see the display at its heartwarming best.Happy Gardening in 2016

PS: Although we are closed in January and February, if you would like to visit the nursery, just give us a call and we will open up for you.

consumer

byJonathan Vernon-Smith

Thankfully most consumer disputes can be settled through effective and firm dialogue. If not, there are programmes such as mine that offer additional assis-tance for people who are finding it difficult to resolve their consumer complaint. However, some cases just cannot be resolved, no matter how hard one or both parties try. It is for these cases that the small claims court can be very helpful. This month, I will outline how to use the small claims court system to obtain the best results. Firstly, DO NOT RUSH TO COURT. In my experience, judges often look unfavourably at customers who are seen to take a company

to court too quickly. It makes the consumer look unreasonable which never bodes well. There-fore always try as hard as you can to resolve the complaint between yourselves first. Consider the small claims court your last resort and it is essential that you have kept a record of your conversa-tions and correspondence. When you reach the conclusion that (within 6 years of the dispute and for amounts up to £10,000) the company or tradesman is not prepared to resolve the problem, you must write a letter of intention. Make it clear in the letter that you have tried hard to offer them opportu-nities to resolve the problem and that you would like to offer them one final opportunity. Allow them one month from receipt of the let-ter to respond, and make it clear that if you do not hear from them, you will lodge papers with the small claims court. Send the letter recorded delivery and ensure they have received it and signed for it. If they still show no interest in resolving the dispute, then you have an important decision to make. Will you go through with your threat of court action or not? If you decide on the former, you must go into it with your eyes open. You can always lose as well as win, however it may not cost you as much as you may think. The fee is dependent on how much you are suing for, but this will be outlined when you proceed with the action. If you are suc-cessful, the defendant will have

to pay your costs as well as the amount you are claiming for.It is also worth noting that you do not need a lawyer to take some-one to the small claims court. It’s relatively straight forward, and as long as you’ve been reasonable and sensible in your dealings with the company or tradesman, you stand a good chance of getting a favourable judgement. In many cases, mediation is of-fered as a way of agreeing a course of action. The result of this is not

legally binding, and most often I would advise you to proceed with this where offered. It doesn’t prevent you progressing a case to a judge if unsuccess-ful. However,

turning it down can made you look unreasonable. If things go your way, the judge will award in your favour and will request that the defendant pays you a sum of money (either the whole of the amount you’re seek-ing, or a proportion of it). They will be given instructions as to how to pay it, and if they fail to do so, you can instruct county court bailiffs to recover the money. You can also escalate the case to the high court for a further fee and in-struct the high court enforcement officers to chase your money. Taking a company to court can be a daunting prospect, and I would always suggest obtaining advice from your local citizen’s advice bureau who will give you tailor-made advice on your specific case. Good luck!

consumer

byJonathan Vernon-Smith

It can be incredibly hard to know if it’s the ‘right’ time to end a marriage. Only you know what’s right for you, your situation and the circumstances surrounding it.Most relationships experience ups and downs, so ask yourself:

“Is it just recent pressures making me feel this way or are my feelings deeper and more

long term?”

Here are some questions we hope may help.

Do You Want a Divorce or a Better Marriage? An unhappy marriage and an un-salvageable one are not the same thing. Are there things in your marriage that if changed, would make you feel differently? Divorce is a drastic step to take when what you’re actually after is change.

Are You Really “Married”?This can seem a strange question. But there’s a difference between a marriage that consists of a couple who are committed to each other and one that is made up of two individuals with separate interests who simply live together and take care of their own needs. Are you and your spouse a team working together on things?

Have You Tried Getting External Help? Have you tried couples therapy or marriage counselling? A third party who’s not emotionally invested in the relationship may be able to help you find new solutions to old arguments. If necessary, they can also help a marriage end with less conflict. If you’re seeing a couples therapist or counsellor and don’t feel it’s helping, it may be due to the therapist. So if you believe your marriage is worth fighting for and you want it to last, then try working with another therapist before calling it quits.

Has Stress Pushed The Relationship to Breaking Point? We all know that no relationship runs smoothly all the time. However, niggles over who does the washing up are very different to managing the stress involved with things such as unemployment, financial ruin or bereavement. These types of situations are often ‘life changing’ and can feel so overwhelming that they affect every part of a relationship, especially if both partners deal with emotions in a different way.Divorce rates often rise in these situations, so it can be worth seeking help with both the

emotional and practical issues you’re dealing with before going down this route.

Do You Still Love Your Spouse?Love can be hard to find when the everyday stresses of life leave us feeling tired and unappreciated. With an ongoing power struggle in the relationship there is little space for intimacy and closeness. However, if there’s even a spark left, it’s worth asking yourself, “can I re-ignite it?” Of course, it’s a two-way thing, but if there’s a desire to rekindle the feelings of old on the part of both partners, the answer is surely “it’s worth a try.”

I WOULD WALK

500 MILES

(If I had the right boots)

It can be sociable or solitary, it can be a casual stroll or an epic hike but whatever you choose there is no easier way to feel better than to walk.If your New Year’s resolution involves some kind of promise to be fitter, healthier or lose weight you can’t go wrong with walking. Even if you just promised yourself some time to relax or spend more time with friends and family then arranging a woodland stroll envig-orates the soul. If you wanted to improve your social life or even find love then joining a rambling group will tick that box too.

Can walking truly get you fit? Yes indeed! Walking briskly so that your heart rate is raised and your breathing is slightly heavier is all you need for a good cardiovascular workout. Pumping your arms increases the intensity, as you can imagine so will a hill. You will also be strengthening your legs and weight bearing exercise such as walking helps maintain bone density. Walk tall, bring you shoulders back and look ahead, pulling in your tummy

will help strengthen your core, give support and stabilise your back. In fact if you find your lower back is aching after a walk you may need to focus your mind on you stomach muscles next time. Remember to do some stretches before and after and build up your pace slowly.

What to wear? It will depend on the terrain and length of walk you intend to do but clearly the right footwear is essential.

If you intend to tackle all 214 Wainright fells then consider a boot with a Vibram sole. Specifi-cally designed to provide excel-lent traction on a wide range of surfaces. In 1954 the first ascent of K2 was made by an Italian expedition wearing Vibram rubber on the soles of their boots - say no more!

PU Soles or Polyurethane soles are a light hard wearing with excellent long-term mechanical properties. PU Soles are practical and keep water out, and also have the advantage of being light-weight.Not intending to tackle K2 just yet?

A great all round walking shoe is the Harkila Stalker Slip-ons, feature nubuck leather uppers a practical deep tread and flexible sole. These slip-ons work equal-ly well on muddy paths, helping you to remain upright, and stylish, during any country walk.

If you intend to be a fairweather walker then as long as your feet are comfy you are good to go, however for anything more, consider looking into some decent wet-weather gear with breathable properties and some good boots.

It doesn’t have to be complicated to get walking just step out of the door. We are so lucky in this area with beautiful walks on our doorstep. If you need some no obligation help getting the right boot or gear for the job, pop in to Rugged & Tough in Hockliffe, they really know their stuff.

Here are some winter driving tips from Jackson & Phillips to help you get the most out of your car this winter and hopefully avoid being stuck at the side of the road.

Winter check/serviceMany people decide to have a winter check, to ensure their car will cope with the everything win-ter has to throw at it. Things like lights, tyres, antifreeze strength, brake fluid, washers, wipers and engine oil will be checked.

Winter tyres Although it is essential to regularly check your tyres are in good condition and the pressures are correct, it may be worth considering winter tyres.

Check lights are clean, clear and working. See and be seen, mak-ing sure your lights and number plates are clear of snow is a legal requirement.

Check wipers are clearing the screen correctly and the wash-ers work well. Making sure your washer bottle is full and screen-wash added to help to stop the system freezing. AVOID using your wiper blades to clear ice and snow from your screen this can blow a fuse or even damage the wiper motor or linkage.

Winter breakdown kitIf you are unfortunate enough to break down this will help. • A warm coat, blanket • Torch or head light• Some food (high energy) e.g.

cereal bars or chocolate• Phone charger• Breakdown cover contact details• Small spade or trowel and a

piece of carpet (for traction)• A tow rope, snow chains or snow

socks• Jump leads

Make a pre-journey checklistMaking sure you have everything you need before setting off could make a big difference.

Include things like;• Full tank of fuel• Phone fully charged and charger• Radio set to receive traffic news• Breakdown cover active• Spare wheel condition • Toolkit and locking wheel nut all

present and accessible

Husband and wife business Hascat Safety celebrated 10 years in business with col-leagues, clients, friends and family at their training facility in Grovebury Road, Leighton Buzzard.

Bob and Sue, Chandler both familiar faces around Leighton Buzzard market had one ambition when they started the business as Bob put it

“When I was asked all those years ago where would I like to be in 10 years time, I replied, still in business, so we have achieved that!”

Hasat Safety have achieved a lot more than simply staying in business. Specialising in helping small businesses comply with the ever changing

health and safety regulations, Bob and Sue have established an excellent reputation both locally and nationally. They have also recently launched their online e-learning training service.

Bee Local asked Bob what he thought had led to their success

“We offer a bespoke service for businesses that are not large enough to have their own health & safety personnel, this

can mean we act as their

responsible person, go in as a consultant on an ad hoc basis, right up to providing all the training for managers and their staff. Flexibility has been crucial to our success as we are able to tailor our service precisely to the client. We have built our reputation on offer no-nonsense advice and not selling a service that is not required”

As if Bob wasn’t busy enough he is also the long-standing

chairperson for local business networking group, LB Connect and regularly attends the Partnership Committee meetings at Leighton-Linslade Town Council to put forward the views of businesses in the group.

Hascat were recently featured in local news for their work in helping Keech Hosice Care with Health & Safety training.

Sue also devotes a lot of time fund-raising both for Keech and for Leighton Buzzard charity, KidsOut.

So what next for Hascat? Bob tells us that he is looking forward to the next 10 years and as they describe themselves as a “local” health & safety business it would be great to work with even more local businesses.

You can contact Bob and Sue Chandler at Hascat Safety on 01525 630676 or email: [email protected]

Scents AppealWe tend to think of perfume as French, but there are some fantastic British fragrance houses. Take Deco London. Launched in 2015, Deco London has created a select range of six fragrances, three for her and three for him. Each one is a real delight, with multiple, complex layers. At £75 a bottle, they’re pricey, but if you’re looking to splash out this Valentine’s, they’re well worth it. Perfume can be split into several ‘types’, although many fragrances cross categories.

The main types are:

FloralFeminine and unashamedly romantic, floral perfumes range from ‘sugar and spice’ sweetness to grown-up sophistication. If she likes Beautiful by Estee Lauder, try Kukui by Connock London – a delicious, grown-up blend of

gardenia, bergamot and white flowers, that’s warmed by notes of sandalwood, vetiver and white amber. (You may have guessed that it has pride of place on my bedside table.)

CitrusFresh, vibrant and invigorating, citrus based fragrances are fun and light-hearted. Think scents of lemon, grapefruit, mandarin, and other refreshing notes. If she likes Happy by Clinique, she’ll love Miller Harris’s Citron Citron.

FruitySimilar to citrus scents, fruity fragrances are uplifting and cheerful. If she has a bottle of DKNY’s Be Delicious at hand, try surprising her with Jo Malone’s English Pear and Freesia cologne.

OrientalExotic, sensual scents that demand attention, oriental fra-grances are warm and rich, with notes of musk, vanilla and amber. They were all the rage in the 80s, but these days tend to be sof-tened slightly with other scents, such as floral notes. If she’s a fan of Angel by Thierry Mugler, try Deco London’s Constance.

Woody/chypreWarm and musky, with hints of sandalwood, cedar, vetiver and moss, these fragrances conjure up images of walking through a

forest at sunset. If she loves spritzing on Miss Dior, treat her to Vanilla and Cedarwood by Kiehl's.

OceanicInvigorating, refreshing and easy to wear, ‘oceanic’ covers a wide range of ‘clean smelling’ fragrances, from crisp white linen to ocean spray. If she’s a fan of Cool Water Woman by Davidoff , treat her to Inis by Fragrances of Ireland.

People have been dabbing on fragrances for thousands of years. In Cyprus, evidence has been unearthed that perfume was be-ing manufactured at least 4,000 years ago. It’s played an impor-tant role in cultures and religious occasions across the world, so it’s no surprise that one of the gifts the three wise men chose was myrrh – an essential oil used predominately for its scent.

Or you could buy flowers -

Flowers - say more than you thinkTraditionally this will be red roses of course. Others may choose their purchases on the basis of colour, smell or even price but there’s a whole language and meaning to flowers too which is called Floriography.

Roses:Red Roses as most will know symbolise Love and Desire but changing the colour of the flower leads to different connotations. For example, Yellow is for friendship, Pink for perfect happiness and Orange for fascination.

There are different meanings for specific types of rose too, such as Tea Roses meaning ‘I’ll remember always’ and Dog Roses connect-ing to pain and pleasure. Arrangements also have an impact.

Thinking back to the traditional dozen red roses, a bunch of a single bloom, means I love you or I still love you, whilst an assort-ment of colours represents the sentiment ‘you’re everything to me.’

A dozen red roses has become the norm, because of the sig-nificance of the number twelve within nature, philosophy and religion. The number 12 often represents a full cycle, so 12 months of the year, 12 signs of the zodiac, 12 hours on a clock for instance. From ancient times, cultures around the world have developed calendars based on cycles of twelve, and there are many mythological and religious connections to the number also. The use of 12 across the natural and spiritual world means that 12 or a dozen, has taken on a univer-sal quality which enhances the significance of a dozen roses.

Turning now to other flowers we frequently buy in the UK:-

Carnations:- Pink carnations mean ‘I’ll never forget you,’ whilst red symbolise admiration and yellow rejection and disappointment, so probably best to avoid those!

Lilies: - Calla Lilies represent beauty and Tiger Lilies wealth

so perhaps a good choice if you are looking to impress.

Tulips: - apparently show love and passion too. Yellow ones mean

‘there’s sunshine in your smile,’ where-

as red tulips are a declaration of love and white ones say ‘I’m worthy of you.’

Daffodils: - show regard.Freesias: - demonstrate trust.

Of course there are many more wonderful flowers to choose from, so if you really want to be sure of making the right impression, it’s worth asking your florist about their meaning.

Bring a small pan of water to the boil and cook the noodles following pack instructions. Drain, rinse under cold running water to stop them cooking further, then drizzle over a little oil to prevent them sticking together. Divide between 2 deep bowls.

Heat a wok over high heat and add the rest of the oil. When it starts to smoke, add the ginger and chilli, then stir-fry for a few secs. Add the chicken and stir-fry for 2 mins. As the meat starts to turn brown, add the rice wine and cook for 3 mins more. Add the vegetable stock, bring to a simmer, then add the mushrooms. Season with the dark soy, light soy and rice vinegar.

Bring back to a simmer, then add the cornflour paste. Simmer and stir until thickened. Stir in the beansprouts and most of the spring onions, then ladle the soup over the noodles. Serve immediately, scattered with the remaining spring onions.

Chinese New YearChinese New Year has been cel-ebrated for thousands of years. No one knows exactly when the tradition first started, but it is believed to date from at least the Shang Dynasty (1766 BC - 1122 BC), although it may be much older.

The Chinese calendar is much older than the Gregorian one we use today, although it has evolved over time. It follows the lunar cycle, with each month beginning with the new moon. Chinese New Year falls between 21st January and 20th February on the Gregorian calendar. This year it will be celebrated on 8th February. Celebrations run from Chinese New Year’s Eve, to the Lantern Festival 15 days later. It is the Year of the Monkey, one of twelve animals associated with Chinese New Year. The others are rooster, dog, pig, rat, ox, tiger, rabbit, dragon, snake, horse and sheep.

The colour red is often associ-ated with Chinese New Year. In Chinese folk lore there was once a beast called the Nian

who roamed the land at the beginning of each year, terroris-ing villagers. Red was found to drive the Nian away, so red clothes were worn, and red lanterns and scrolls were hung. The tale goes that the Nian was eventually captured by a monk, but people have continued the traditions. Red packets contain-ing money are also often given to younger people by married couples, to bring luck.

Food plays an important role in Chinese New Year. New Year’s Eve dinner is a day for families to gather together to celebrate at home. The type of food served depends on the country and region.

Some of the most common food traditionally eaten on or around Chinese New Year in-clude dumplings, fish and spring rolls. Many of the ingredients are chosen because their name is considered auspicious. For example, there is a vegetarian dish called Buddha’s Delight which is often eaten at this time of year. Fat choy is usually included in the dish, due to

the last syllables of its name sounding similar to a Canton-ese phrase for prosperity. The preparation and way of eating the dishes is also considered very important.

Restaurants across the UK will often hang up decorations for Chinese New year and hold their own celebrations, includ-ing special menus and enter-tainment. Many of the cities also host Chinese New Year celebrations and activities, from lantern making and martial arts demonstrations to parades and firework displays.

The Chinese dragon has be-come an iconic part of Chinese New Year. Dragons are said to ward off evil, and bring prosper-ity and good luck. The dragon dance is performed by a group of dancers carrying a giant, moveable dragon. It is believed that the longer the dragon, the more good luck it can bestow, so some can reach over 70 metres!

It’s lovely to get out on a chilly, bright morning for a walk with the dog or a hack out on your horse or pony, but ice and snow can represent a major danger to them, as they do to us.

Icy surfaces are best avoided altogether, especially for your horses; dogs’ feet are less unsuited to slippery surfaces but even they can still skid and hurt themselves.

Walking or riding in soft snow, however, can be a joyful experience – except when the snow balls up in or around the animals’ feet.

In North America, where many states and provinces have months of snow each winter, farriers can insert special pads between the horse’s hoof and shoe. If you want to try this for your horse here, ask your farrier to get some pads from www.stromsholm.co.uk.

You’ll also find that snow balling in a horse’s feet is much less of an issue if the horse is not shod.

Foot-lickin’ goodSome dog and horse owners swear by petroleum jelly (Vaseline) smeared throughout the foot region and although it does work, it can be a prize pain to

remove afterwards. Other horse owners recommend using hoof oil, or even good, old-fashioned butter.

Butter would certainly please our dogs! You can also try cooking spray which although convenient, may not be “heavy” enough to stay on their feet for long (if they don’t lick it off beforehand, anyway.)

And as for our cats? Usually to be found curled up by a nice warm fire or radiator. Right next to me…

Big Garden BirdwatchIt started back in 1979 when the Royal Society for the Protection of Birds (RSPB) invited its junior members to count the number of birds in their gardens over a weekend in winter. The aim was to work out the ten most common birds in the United Kingdom, and thanks to children’s TV programme Blue Peter, thirty four thousand youngsters took part! This year the Big Garden Birdwatch takes place on the weekend of 30th and 31st January. For more details on how to get involved, visit www.rspb.org.uk/discoveranden-joynature/discoverandlearn/bird-watch.

National Nest Box WeekNational Nest Box Week takes places from 14-21 February 2016 and it’s a chance for you to encourage birds in your garden to come home to roost!

Organised by the British Trust for Ornithology, or BTO, the week is an important one for all the brilliant birds we have in the UK, from Robins to Owls!

The idea behind the week is to get us all to put up nest boxes in our local areas, not only to protect the wildlife we already have, but to encourage even more birds to brood in our backyards!

National Nest Box Week started in 1997. As more trees are cut down, birds lose their homes, so putting

up boxes is a great way of helping our winged friends - and it’s thought there’s now between 5 to 6 million boxes across the UK!

Different types of boxes will at-tract different types of birds. For example, small holes in nest boxes will attract the Blue Tit, Great Tit, Nuthatch and House Sparrow. Large boxes with holes will attract Starlings, the Greater Spotted Woodpecker and even the Little Owl. Open fronted boxes will attract the Robin and Pied Wagtail and very big boxes attract, amongst others the Kestrel, Jackdaw and Tawny Owl.

You can either make your own nest box, or follow the link at the official site and buy a ready made box and set it up in your garden. Then all you have to do is wait patiently and see what happens next ...www.bto.org/about-birds/nnbw

A Local Read

Read this if:If you want to look at your husband with suspicion

Read this if:You want a different view on your commute to work

Praise for this novel, first published at the beginning of 2015, has spread like wildfire and it has become THE book to read. So just in case you are one of the few that hasn’t succumbed to this thriller, why should you pick it up?

Whether you are a regular commuter, like the central character Rachel, or not, you will easily be able to identify with the opening section. How many times have you sat on a train and looked out of the window into the garden or kitchen windows of the houses that back onto the tracks, as you speed past on your way to your final destination. As you catch glimpses into a life that you don’t know, do you wonder about the people that occupy those houses?

Rachel doesn’t have to wonder. She passes familiar houses every day and purposefully looks for Jess and Jason, a young professional couple who live a perfect life. She knows them and is in many ways envious of their relationship. Seeing them in their garden is a moment of comfort as her own life is falling apart. But is all as it seems? On one day, as the train slows down at a signal by the house, Rachel notices that something is amiss.

Suddenly she is sucked into a nightmare that seems destined to reveal everything, and that will shock you as her commuter journey turns out to be anything but normal. It’s a small world, but when that world comes crashing down around you, it becomes all too clear that this small world is a lot smaller than you first thought.

Her husband is dead.In desperate need of closure, Mimi travels to the one place Joel still has ties—The Marcus Ranch in Texas, inherited by his handsome younger brother Austin.

The closer Mimi grows to the Marcus family, the more she considers it home. But when suspicions of Joel’s past surface, Austin refuses to disclose family secrets—even to his brother’s widow. It’s only by accident she uncovers evidence of Joel’s tainted past. Devastated by his lies and betrayal, she slowly opens up to Austin, and together they unfold layers of pain and

grief.Mimi is sure she’ll never love again, but is Austin the man to prove her wrong? Then the unthinkable happens…Just as Mimi finds new hope in a future with Austin, Joel returns home from war. Enraged, traumatized, and teetering on the edge of insanity, Joel confesses to a history of deception, revealing yet another secret—this one too terrible to forgive. In an awful twist of fate, Joel proves marriage vows are made to be honored. No matter what.

Till Death Us Do Partby Christina Slough

Girl on the Train byPaula Hawkins

Come Fly With Meby Peter Andre

The fateful day Mimi Marcus has dreaded begins with a phone call... The wife of a U.S. Marine, Mimi spent countless nights worried that her husband Joel would fall in the line of duty. He had fought valiantly and served his country with honor. That’s exactly what they tell her when they deliver the news—Joel was taken by the enemy in Afghanistan.

Devastated by his lies and betrayal, she slowly opens up to Austin, and together they unfold layers of pain and

puzzlesThe Mid-Life Crisis Guide to...

Slang is second language to the youth generation, and I personally think that some may know it better than English itself. With new words evolving every day, it may be hard to keep up to date with what it all means! Take a read, remember it, and use it to impress your kids and friends, I promise you they’ll be amazed- or not

Bae = Bae stands for ‘Before anyone/anything else’ and is just another way of saying babe or baby. It is used to call somebody who you may find attractive or important to you.

Peak = Peak is when something very negative happens. It is an unlucky situation that is bad on your behalf or somebody else’s, resulting in it being “peak for them.”

Lol = Even though ‘lol’ has been around for ages, I still feel as if some people believe that it means ‘lots of love,’ when it actually means ‘lots of laughs.’ This means that it is used when

something is funny in a con-versation or situation.

Sick = When something is ‘sick,’ it doesn’t mean that somebody has liter-ally thrown up, but actually quite the opposite. It means that something is positive or actually quite cool.

Turn Up = When somebody wants to “turn up” or is “turnt” this actually means that they are most prob-ably intoxicated and want to party. Sometimes the person may not actually be intoxicated, and may just be really energetic or excited. Up to you to decide on that one.

Squad = Squad is pretty straight forward in terms of understanding, as it refers to your friendship group.

Fleek/Fleeky = This is one of my personal favourite slang terms that originated from a Vine video. This means that something is looking good or flawless, such as it most commonly being used for teenage girls saying that their “eyebrows are on fleek.”

If you feel like you have lost touch with what’s cool and what’s not (and if you are still saying “cool” you probably have) here, to

keep you informed, is local student and blogger, Kellie Sadler, with this issue’s guide to slang!
