    discretionastohowmanyracksofribstheychosetoBBQ.Ribsmustbeinunopened,originalvacuum-sealedpackagingandwillbeinspectedbytheHealthDepartmentInspectorpriortobeingcookedatthefairgrounds.Oncethemeathasbeeninspecteditshallnotleavethecontestsite.Meatmustbestoredinasealedcoolerpackedwithiceandmaintainedatatemperatureof40Forlesspriortobeingcooked.Marinatingand/orcookingcanbeginonceyouhavebeeninspected.Aftercooking,meatmustbeheldat135Forabove.

    2. Immediatedisqualificationwilloccuriftemperaturespriortoandaftercookingarenotmaintainedasperhealthdepartmentguidelines.Ifafterreadingtheirguidelinesyouhaveanyquestions,pleasecalltheirofficeandspeaktoaninspectorat475-7960.

    3. Teamcaptainmayonlycookfortheirdesignatedteamatthecontest.Amaximumof4membersperteamwillbeallowedwithonlyonevehicleperteamadmittedtoyourcookingarea.

    4. Youmustbeinthesetupareabetween8-9amoryouwillbedisqualified.YoucanstartsettingupbutyoumustbeinspectedbytheHealthInspectorbeforeyoucanstartcooking.Pleaseusearecipethatwillallowyoutocookwithintheabovedesignatedcookingtimes.

  • 5. EachBBQerwillbeassignedacookingspace,allcookers,smokers,grills,tent,vehicleand/oranyotherequipmentshallnotexceedtheboundariesoftheassignedcookingspace(20x20space)Teamsshallnotshareanassignedcookingspaceorcookingdevices.

    6. BBQersshallprovideallneededequipment,suppliesandadheretoallfireandothersafetycodes.Afireextinguishershallbenearallcookingdevices.Itwillbetheresponsibilityoftheteamcaptainthattheassignedcookingspaceiscleanandorderlyfollowingthecontestandallequipmentandgarbageberemovedfromthesite.AnonsitejudgingwilltakeplaceduringthedaybyFairofficialsandtheresultswillbeaddedinwiththeblindtastejudgingscores.

    7. Nofiresshallbebuiltonthegroundforthepurposeofcooking.AregulationcookingdeviceMUSTBEUSED.

    8. Judgingwillbeginpromptlyat6pm.Thereforeallribsmustbeonthejudgestablebetween5:30and5:45pm.AcontainerwillbesuppliedtoeachBBQerbytheFairAssociationandmarkedwiththenumberofyourspaceonthetop.Noothermarkingsshallbeappliedtothecontainer,noaluminumfoil,toothpicks,skewers,orotherforeignmaterialsareallowedinthecontainer.Ifanymarkingsarefoundoncontainersthiswillresultinadeductionofpointsbythejudges.

    9. EightRibs,cutwithboneinshallbeturnedin;sauceisoptional,itshallbeapplieddirectlytothemeatandnotpooledorpuddledinthedesignatedofficialcontainer.Nosidesaucecontainerswillbepermittedatturnintime.Youmustgarnishyourentrywitheitherfreshparsleyorbiblettuceunderneathyourribs,nokale.Yournameshallnotappearonthecontaineroryouwillbedisqualified.

    10. Requiredclothingforcookinghatorbandana,shirt,shorts/pantsandshoesmustbeworn;apronoptional.

    11. Thefollowingcleanlinessandsafetyruleswillapply:Nouseofanytobaccoproductswhilehandlingmeat,cookingspacemustbemaintainedinanorderlyandcleanbasisatalltimes.

    12. Therewillbenorefundofentryfeesforanyreasononcedeadlinedatehaspassed.

    13. Nooneunder18yearsofagewillbeallowedinthecookingareaandabsolutelynopets.AhandwashingstationwillbeplacedinthecookingareaforusebytheBBQers.

    14. Nocookingareawillbeleftunmanned.15. Onceyouhaveturnedinyoursample,pleasereturntoyourcookingareaand

    proceedwithcleanupofyourcookingareaanddisposeofalltrashintheproperreceptaclesinthearea.

  • JudgingGuidelines/RegulationsJudgingwillbedonebyateamofthreequalifiedpersons.Onlyjudgesandcontestcommitteememberswillbeallowedinthejudgingtentareaduringthejudgingprocess.Eachjudgewillfirstscoretheribsonappearance,thentheywillbejudgedonflavor,textureandtenderness.Oncetheseresultshavebeentalliedwinnerswillbeannouncedandpresentedwithawards.Judgeswillbesuppliedwithbottledwater,papertowels,wetonesandscoresheets.
