Ingredients• Chickenbreasts,boneless,skinless4• Soysauce2Tbsp(30mL)• Extravirginoliveoil2Tbsp(30mL)• Cilantro,fresh,minced2Tbsp(30mL)• Ginger,minced1Tbsp(15mL)• Garlic,cloves,minced2• Hotredchilipepperflakes½tsp(2.5mL)• Yellowpeppers2• Ricevinegar3Tbsp(45mL)• Mixedsaladgreens5½cups(1.350L)
• Salt½tsp(2.5mL)
Directions 1. Mincefreshcilantro.Inalargebowl,whisktogethersoysauce, halfoftheoil,cilantro,ginger,garlicandpepperflakes.Add chickenbreastsandtosstocoatwell.Coverandrefrigerateforat least30minutesoruptooneday.
2. Meanwhile,cutpeppersintoquarters.Preheatgrillusing medium-highheat.Grillpeppersforabout15minutesuntilthey juststarttoblacken.Removetoplate.Placechickenbreastson greasedgrillovermedium-highheatandgrillfor10-15minutes persideoruntilathermometerinsertedintothebreastreads 165°F(74°C).
3. Chopthewarmgrilledpeppersandchickeninto½inchwide strips.Inlargesaladbowl,tosschickenandpepperswithgreens andremainingoil,vinegarandsalt.
