it’s time to try: lentilsWhat are lentils? Like dried beans, lentils are a legume

that grows in pods containing one or two seeds. Lentils are much

quicker and easier to prepare than dried beans and readily absorb

the fl avors they are cooked with. Green and red lentils are the most

commonly available varieties, but in the Good Food Store’s bulk bins

you’ll also fi nd gold lentils and the very small Black Beluga lentils.

Why lentils are good for you. Lentils are often on nutritionists’ lists as one

of the superfoods that should

be part of everyone’s diet.

Like all legumes, they

are a terrifi c source of

cholesterol-lowering fi ber.

Lentils are also very high

in protein and very low in fat,

plus they’re packed with heart

healthy folate, magnesium, potassium and energy-boosting iron.

How to prepare lentils. Unlike dried beans, lentils do

not have to be pre-soaked before cooking. Spread them out on

a cookie sheet and check for small stones, then rinse them in a

strainer under cool running water. Use three cups of liquid for each

cup of lentils and boil until tender, 15 to 30 minutes depending

upon the type of lentil and the texture you desire for your recipe.

Lentil, Spinach, Apple & Asiago Salad • 1 cup green lentils • 3 tablespoons extra virgin olive oil

• 3 shallots, thinly sliced & separated into rings• 1 carrot, fi nely diced • 1 stalk celery, fi nely diced

• 1 red bell pepper, de-seeded & fi nely diced• 1 heaping tablespoon chopped parsley

• 1 small Granny Smith apple, peeled, cored & fi nely diced• 2 tablespoons balsamic vinegar

• Salt & freshly ground black pepper, to taste• 8 ounces spinach, rinsed, drained & stemmed• 3 ounces Asiago cheese, shaved into ribbons

1. Bring a medium saucepan of water to a boil. Add lentils. Simmer, stirring occasionally, until lentils are tender, about 20 minutes.2. While lentils cook, heat 2 tablespoons of the oil in a large skillet over medium heat. When oil is hot, add shallots and cook, stirring occasionally, until they begin to soften. 3. Add carrot, celery, and bell pepper. Cook, stirring occasionally, until all of the vegetables are tender, about 5 minutes more. 4. Stir in parsley, apple, vinegar, and remaining oil. Season with salt and pepper, then transfer to a large serving bowl.5. Drain lentils and add to vegetables. Toss spinach into lentils and adjust seasonings. 6. Gently toss Asiago ribbons into salad, saving a few to garnish the top of the salad.

Spirulina, Small But MightySpirulina, Small But MightyConsuming algae is not a high priority for most people. But perhaps it should be, as research indicates that some of these single-cell organisms can be quite benefi cial to human health. Spirulina, for example, is a microalgae that the University of Maryland Medical Center describes as “rich in protein, vitamins, minerals, carotenoids and antioxidants that help protect cells from damage.” And the journal Microbiological Reviews reports that spirulina isconsidered nutritionally superior to nearly all other plant proteins, including legumes. While it grows naturally in many environments, most spirulina consumed in the US is grown in laboratories.
