Coffee is one of the most exciting and complex
products in the world, with a history as deep and
rich as the brew itself. As a post-colonial prod-
uct, it is relatively young compared to wine and
spirits. Co-founder of progressive coffee busi-
ness, Coffee Collective, Klaus Thomsen believes
that we are just scratching the surface of under-
standing the bean as an agricultural product and
how the way it is grown, handled and produced
affects its quality and flavour as a brew.
"What I love about coffee as a beverage is the
responsibi l ity that the consumer has in getting
the last step of getting the most f lavour out of
the experience,“ he says. “There are many rituals
around making and consuming coffee and these
put the abil ity to create something completely
different at the end into the hands of those who
make and drink it . "
"Right now, there is a trend for cold coffee op-
tions: both with cold brews and hot brews that
are then chil led for a different, less bitter cold
drinking experience. At Coffee Collective, they
use nitrogen to make nitro-cooled coffee that
looks a l itt le l ike Guinness. " These experimental
coffee drinks are fun to try when handcrafted in
coffee shops, but here Klaus gives us the low-
down on how to make the best coffee at home.

To get the best f lavour, i ts a l l about
proport ions . Di f ferent coffee types
have di f ferent densit ies so scoops
can be mis leading. As a ru le of
thumb, try 65 grams of coffee for
every l i t re of water.
DON’T assume that the water is
good. 98.5% of what you dr ink f rom
a cafet ière is water, so us ing tap
water that is too hard, minera l ly or
chlor inated dramat ica l ly af fects the
f lavour. I recommend us ing f i l tered
or even better, bott led water.

1. Always wash the knife by hand immediately after use
under warm running water with a little soap. The knife is not
dishwasher-safe.
2. Dry the knife with a tea towel immediately after washing.
To stay sharp, the knife will need whetting regularly. This
should be done using a whetstone. Hold the knife at an angle
of 13-15° while passing the knife over the whetstone.
For correct use of the whetstone, refer to the instructions for
the whetstone used. For optimum protection of the blade, the
knife should be kept on a magnetic knife strip, in a knife block,
or in its original packing when not in use.

Levin special ises in bouquets, arrangements and
decorations of faded flowers.
How did you become interested in dried flowers?
For a considerable part of my childhood, I l ived
in Kenya and Tanzania. Here, I spent much time
on discovering which f lowers and varieties were
most suitable for drying. I particularly fel l for
the Protea f lowers as they retain amazing flow-
er structures when drying. To this day, Proteas
remain important elements in many of our bou-
quets and decorations.
Why is sustainabil ity important to you?
Fundamentally, I bel ieve that we should protect
nature’s resources. At the same time, I take great
pleasure in putting things to renewed use and in
breathing new l ife into old things. This stimulates
my creativity, and it is far more exciting than just
buying new flowers.
Which flowers are best suited for drying?
The more robust the f lowers, the better they wil l
be suited for drying. African and Austral ian f low-
ers are able to bear extreme conditions – such
as for instance Protea. They dry nicely and re-
tain colours very well . Hortensia, elephant grass,
bulbous plants and pampas also produce great
results. And, obviously, most types of leaves can
be dried and used as f lower confetti .
