AutoCook™ Confectionery Cooking SystemsBaker Perkins has been supplying high-quality confectionery cooking systems for many years. These systems have contained at their core a number of unique cooking technologies supported by a robust design of the overall process and powerful, user-friendly controls.

The AutoCook™ range takes these three key elements and adds a fourth, modular design, to bring speed and simplicity to the design and installation of even the most complex cooking system without sacrificing any of the original process integrity

Robust Process DesignSelecting and sizing the optimum combination of weighing, mixing, dissolving, cooking and other process elements requires bothextensive process know-how and specialist engineering skill. The Baker Perkins cooking processes incorporated into AutoCook™systems have been refined over many years to consistently deliver high quality product and low operating costs.

Unique Cooking TechnologiesBaker Perkins Microfilm™, Turbofilm™, Carablend™ and Fondant cookers have been designed to continuously process confectionery syrups in a way that is both efficient and ideally suited to the end product. Continuous processing ensures that every part of theproduct sees exactly the same conditions so high quality andconsistency are guaranteed. The cooker range includes lab-scaleversions for product and process development work.

Control SystemsAutomatic systems set all the operating parameters from a central recipe system then continuously monitor the process toensure quality and consistency. Changes are automatically cascaded through the system and full process visualisation is included along with comprehensive alarm management, to enable operators to quickly identify and address potential problems. Technical support is available from Baker Perkins via a web-enabled remote access system.

Modular DesignTo develop the AutoCook™ range Baker Perkins engineershave divided the cook process into defined stages anddesigned a skid-mounted module for each. Differentcombinations of these are used to create a completerange of cooking systems for virtually every type of sugarconfectionery product. The modules are fully assembledand pre-tested in our factory to reduce the time neededfor installation and commissioning. They are alsospace-efficient and provide easy access for maintenance and cleaning.

Innovation CentreThe Baker Perkins Process Innovation Centre in Peterborough, UK isavailable for development of new products and processes as well astests and demonstrations of our equipment. The centre contains a fullrange of test and development equipment for confectionery, includingall the cooking processes, plus lab scale depositor, and a 250mm wide continuous pilot line. Our experienced food technologists use these facilities to develop new products and processes with customers.

Project ManagementEvery contract at Baker Perkins is assigned a project manager whose job is to ensure that equipmentis delivered, installed and commissioned on schedule, and that it meets the customer’s requirements in every respect. Customers are kept informed about the progress of their order and the project manager implements any changes that may be required after the order has been placed. Effective project management is our professional approach to making sure we meet our customers expectations.

Lifetime Support™Every piece of Baker Perkins equipment comes with the assurance of comprehensive support throughout its life. Lifetime Support™ ranges from product development in our Innovation Centre to services that reduce the cost of routine maintenance for each piece of equipment, increase its useful life or improve its performance. These extend from parts and service through inspections, fault-finding and remote supportto major repairs and rebuilds.
