Welcome to your free guide,the new Jersey eating guide from Gallery magazine. As Jersey residents we know we’re spoilt for choice when it comes to all things culinary but it’s amazing how there is still so much to learn. We wanted to produce a decent food guide to offer more information and actual content than any before it. We’ve got features, restaurant profiles, interviews with the Island’s top chefs and a few snippets of features you may recognise from Gallery too. We’ve done a poll amongst our friends and confidantes and included a full directory of all the places we think are half decent to go and grab something to eat. Whether you have an urge to book in for some Jersey shellfish ravioli at Tassili, a steak at Wildfire or a night in with some lettuce wraps from the Noble House, this is the chance to flick through and try something new. We’ve also included all the take-away numbers with recommended dishes.

We’re not stopping there either. As part of Appetite each year we’ll be encouraging restaurants to offer a special menu over the month of March to coincide with the launch of the guide. We know it’s been done before, but why not encourage it, all the better for foodie explorers and the restaurants hoping to greet them. So go on, put me next to your sofa / phone / bed / jacuzzi and use me as reference next time you’re thinking of trying somewhere new to eat or ordering in.

Beach CafésThere’s nothing quite like a steaming hot coffee and a huge fry-up at one of the island’s beach cafés after a morning’s surfing. Or feeling the sand still between your toes as you tuck into a bowl of fresh moules à la crème while watching the sun go down. The island’s beach cafés range from quirky kiosks where you can get fresh Jersey crab sandwiches and homemade burgers, to beach-side restaurants serving supper with a view.

It’s hard to believe, but Plemont Café has been serving refreshments for well over a century. Whilst the menu has no doubt changed many times, the stunning beauty of Plemont Bay is exactly the same.

The café is nestled on the edge of the cliffs affording uninterrupted views of the beach and the neighbouring islands. A family-run business, Plemont Café is relaxed with an informal atmosphere and a great range of home cooking. The menu includes a varied selection of breakfasts, lunches, vegetarian dishes and their famous homemade cakes. From Belgian waffles to seafood salad, bacon rolls to deli wraps there’s a wide variety of food on offer, including children’s meals. “We believe in serving freshly prepared meals - it’s what our customers want” say Plemont Café.

The propietors support Genuine Jersey produce and use many ingredients wherever possible to reflect this - the burgers are made from 100% prime Jersey beef and the menu features seasonal salads and vegetables, handpicked Jersey crab and Jersey icecream. The cakes are all homemade using real Jersey butter and local free-range eggs, and you can taste the difference.

If you’re looking for a mid-priced relaxed meal, don’t think your only option is to head to the pub. Bright and light beachside restaurant Waves has a great selection of food on the menu, including some delicious Moroccan and Thai dishes from a chef who isn’t afraid to experiment with flavours.

Waves can cater for everyone in the family with please-all favourites like cod and chips and spaghetti bolognese, homemade chicken goujons for younger appetites and regularly changing specials. The staff are also very accommodating for those with gluten or dairy allergies. If you’ve still got room, the dessert selection is a great mix of ‘old-school’ proper puds, like Eton mess, crème brulée and sticky toffee pudding. The wine list has a good selection of New World wines with Chilean merlot and Sauvignon blanc as the house wines, along with perennials like Oyster Bay, and its not extravagantly priced – the most expensive wine is still under £25.

Waves is a perfect summer spot with alfresco dining outside on the shady terrace and plenty of parking. And of course the beach is only a couple of steps away…

Murray’s is something different from the rest. Breakfast starts at 9am and stays there throughout the day for anyone who gets up late. The hand-thrown pizza and pasta is amazing, they even make gluten-free pizza and pasta too.

The coffee is as special at Murray’s as it is unique - their own blend - Murray’s Coffee. It’s open seven days a week from 9am until last food orders at 10pm, which means you can get food at any time of the day - how good is that at 3.45pm on a rainy Monday afternoon? The wines are deliberately kept at a low price and alongside the specials board, there’s a stunning £9.99 three course menu which is served all day and night, with a £9.99 wine list. They told us ‘Eat that offer you Tennerfest people’!

After a massive refurbishment, with diffused lighting, stone flooring and iMac & wi-fi internet services, cool jazz sounds and leather sofas, you can see why Murray’s is such a popular place. Open since 2005, Café Spice serves Bangladeshi and Indian fusion with a modern twist to traditional Indian food. ‘Most of the recipes on my menu are what my grandmother would have cooked at home’ explains owner Abdul Samad who has also spent time in Bangladesh researching exactly what the locals are cooking, to bring it back to Jersey.

True to its name, Café Spice uses spices and seasonings rather than marinades to cook its food. It means that your meal may take a bit longer to arrive than in other Indian restaurants, but you can be sure it’s cooked from scratch, with special blends of spices and herbs prepared by the Café Spice chefs.

Many of the dishes are authentic Bangladeshi dishes like the Gost Raj - tender baby lamb soaked in garlic and cinnamon sticks overnight then cooked in a lemongrass and vine tomato sauce or the Indian roast lamb – a favourite dish of the maharajahs - that needs to be ordered 48 hours in advance.

With its neutral colours and modern canvases the restaurant looks more European than Indian, but although the setting is modern, the food is incredibly authentic.

Opened just two years ago, the Eating House has a modern and bright interior with striking artwork, but still retains a traditional feel, creating an atmosphere that is relaxed, friendly and informal.

Arriving by car is no problem as there is plenty of on site car parking. The menu is simple but up to the minute, with lots of comfort-food appeal - you’ll find steaks, pies and pasta as well as contemporary global dishes to keep things lively. During the day sandwiches and light bites are offered alongside the normal menu, making the Five Oaks Eating House a perfect out of town destination for a quick catch up with friends or family.

The Mandarin RoomWhen you want a takeaway that’s a cut above your average chop suey, head to the Mandarin Room. The restaurant and takeaway has only been open a couple of years, but it’s developed a reputation for outstanding quality Chinese food. Helen Wong and her chef husband Kenny are keen proponents of local produce, and this translates into a contemporary take on classic Chinese recipes using the best Jersey produce and seafood. Try the gourmet dim sum for a real treat or a steaming bowl of won ton soup, and follow it up with one of the Mandarin Room’s famous dishes - the chilli beef perhaps, or the Kung Po chicken. Also worth a try is the speciality Mongolian crispy lamb which comes with pancakes and hoi sin sauce to eat crispy-duck style. Another of the Mandarin’s specialities is the noodle menu, especially their Japanese-style Udon noodle dishes. Meals are served in generous portions, and taste freshly-made.

What’s your favourite dish on your own menu? My favourite dish at the moment is a loin of rabbit filled with a sweet corn mousse and wrapped in pancetta, served with roasted langoustine tails and a rhubarb scented jus.

In your opinion – where’s the best place to eat in Jersey… apart from your restaurant of course!? When I’m off I generally eat simple food unless I go to London to eat, but my favourite Jersey restaurant has to be Hector’s Fish & Chip shop - they do the best, freshest cod, chips and mushy peas ever!

You’ve come home hungry – what would you make for yourself? When I get home from work it’s normally quite late so if I’m hungry it has to be something prepared quickly and always ends up being a couple of slices of bread topped with a red onion marmalade, French goat’s cheese and sun-dried tomatoes: 5 -10 minutes in the oven then served with rocket and balsamic vinegar - to die for.

Sweet or savoury? As I have spent half my career as a pastry chef (and I have been a chef for 25 years) I tend to now favour savoury over sweet. However I can still be easily tempted when walking past a bakery.

What’s your tipple? My favourite tipple when at home has to be a bottle of red wine - nothing expensive, a hollick or a merlot would be great.

Shaken or stirred? I’d rather be shaken than stirred!

What do you do on your day off? My home life is just as busy as my work life with two young children and family commitments but when I have the chance and the surf is good you can find me either surfing or sitting on my pride and joy which is my Ducati. Who inspired you to start your career as a chef? There has to be only one inspiration in my career and that has to be Keith Floyd. I owe a lot to that man.

If calories and cholesterol didn’t matter - what would you treat yourself to? Well, if calories and cholesterol didn’t matter, l would have to indulge myself with a lardy cake dripping with soft toffee sugar.

What’s your favourite local product? On the island I am surrounded by fabulous produce so to pinpoint just one product would not be entirely fair but I think I have to say that the Jersey shellfish and sea fish are probably the best I have ever come across.

If you could choose anyone … who would you want to cook for you? It would have to be Thomas Keller, the highly acclaimed Chef Owner of the French Laundry in the Napa Valley in California.

What’s your favorite local product? On Jersey the shellfish is banging, some of the best I’ve seen. If you could choose anyone … who would you want to cook for you? No one cooks better than my dear old mum… but Thomas Keller from the French Laundry would be a close second.

You’ve come home hungry – what would you make for yourself? Chicken and mushroom pot noodle!

What do you do on your day off? I opened two new restaurants in the last nine months, so I can’t really remember days off! But I would like to spend the day relaxing with the family. Who inspired you to start your career as a chef? Marco Pierre White after watching Take Six Cooks, his energy passion and drive were a real inspiration.

If calories and cholesterol didn’t matter - what would you treat yourself to? Pan fried foie gras with fried free range egg and truffle vinaigrette, mmm….

What’s your favourite local product? There is so much to choose from in Jersey – we’re so lucky. At the moment I really enjoy cooking with John Hackett’s fantastic local pork from Brooklands farm. In the Bass and Lobster we will be using as much local produce as we can: meat fish vegetables and even cheeses. If you could choose anyone … who would you want to cook for you? Paul Bocouse, genius, inspiration. I’ve cooked for him so it would be nice if he’d return the favour!

What’s your tipple? A very special customer gave me a bottle of Louis Roederer Crystal Rosé for a special occasion but generally a good quality Bordeaux.

What do you do on your day off? With two young boys, Luke 7 and Charlie 5, I generally tidy up!

Who inspired you to start your career as a chef? I left school in the last big recession in 1982 and there was no prospect of getting my dream job as a silversmith in Sheffield. My mother was happy to see me get a full time place at a local college to train as a chef.

If calories and cholesterol didn’t matter - what would you treat yourself to? Longueville Manor’s Head Chef Emmanuel makes the most divine warm spaghetti and lobster - to die for!

What’s your favourite dish on your own menu? I have two favourites - Fresh Jersey crab beignet with slow-cooked Quail eggs and ‘A Tasting of Jersey Tender Beef’ because it gives us the scope to be creative with our cooking methods. This dish is a constant on the menu but is always evolving. One element of the Tasting of Jersey Beef is the cottage pie, which uses the new molecular method of cooking through our creation of mashed potato foam.

In your opinion – where’s the best place to eat in Jersey… apart from your restaurant of course! That’s a really tough one. I have to sit on the fence and say, ‘my dining room at home with my wife and children’. Seriously, though,

there are some fantastic restaurants here and some great chefs pushing the bar higher all the time - I just wish I had more time to dine with them more often!

You’ve come home hungry – what would you make for yourself? I always come home hungry!! Sometimes a plate of cheese and a glass or two of wine, sometimes a full fry-up - it depends on the mood, really.

Sweet or savoury? Savoury - I enjoy starters and main courses so much that I am normally full up by dessert, unless it is something that intrigues me… then I just have to try, regardless of my being close to bursting!

What’s your tipple? Stella Artois, unless it’s a special occasion. Then it’s Laurent Perrier, preferably Rosé.

Shaken or stirred? Stirred - effortlessly!

What do you do on your day off? What day off? A free day is a family day.

Who inspired you to start your career as a chef? My dad was a chef and I used to help him in his kitchens. He was good, I wanted to be better… and I am!! (he says, with a cheeky grin and a chuckle).

If calories and cholesterol didn’t matter - what would you treat yourself to? Calories and cholesterol don’t matter, do they? I’ve always had a high metabolic rate and I burn off the calories easily - that’s how I’ve managed to keep this sleek figure! A treat for me is simply good food, skillfully cooked and packed with flavour; that and a bar of ‘Fruit and Nut’… if I can keep it hidden from the kids long enough for me to get to it.

What’s your favourite local product? Apart from the potatoes, vegetables, fruits, salads, tomatoes, herbs that are grown on the island, and the vast array of stunningly fresh seafood caught around the shores of Jersey, my favourite local product would have to be the Jersey Tender Beef that has been lovingly reared over the past few years for its unique and versatile flavour. There are so many things that can be done with it that the ‘Tasting of Jersey Tender Beef’ will remain on my menu for a long time to come, whilst it continues to evolve.

If you could choose anyone … who would you want to cook for you? Thomas Keller and it would have to be at his place, the French Laundry In Yountville, California… followed by a tour of the Napa Valley!
