• Wine has intertwined the human civilization, agriculture and cuisine. as part of the daily beverage that is very important to the human history.

• The oldest winery has been discovered in a mountainous area of Armenia, which called Areni-1 cave. (Picture below)

wine production in Europe were find.

AGING OF WINE

• Aging of some wines could improve the wine quality.

• The Ancient Greeks and Romans had notice the potential of aged wines.

• “And no one after drinking old wine wants the new, for they say, ‘The old is better.’” (Luke 5:39)

• The collection of wines were aim to aging the wine. It became investment now days.

HOW FAR IT WILL GO?

• It is very dependent on the aging potential. According to Master of Wine Jancis Robinson, after 5 years aged only around the top 10% of all red wine and top 5% of all white wines could be improved significantly enough with age to make drinking more enjoyable than at 1 year aged (Wikipedia, 2012).• There are many factors could influence the aging

of the wine, the three main factors are light, temperature and humidity.

• Wine has been made for everyday drinks, but since 1970s, some of the organized and formal sale and resale of the best wines, some people start investing wine as a potential value item. • In 2000, a bottle of Haut-Brion 1989 was $341 per

bottle at Sotheby’s. In 2011, the same bottle has got the prices $1341. • Château Lafite Rothschild 1982, $316 per bottle

in 2000 that cheaper than 89’ Haut. But a decade later the price were reaching $4000 per bottle.

• But not all the wines are collectible, most of wine are not. According to the low aging potential. • 90 per cent of the world’s investment wine is

produced from Bordeaux of France (Wikipedia, 2012).

• Sauvignon Blanc is the main variety of New Zealand wine. Well known by the pungently aromatic green capsicum, gooseberry and lush passion fruit characters that are young drinking wine should not been aging.

• Even just one case, you can become a wine collector. • Setup one: Set a budget for your collection. • Setup two: Developing a buying strategy.• Setup tree: Develop a storage plan.

HOW TO PROTECT THE WINE UNDER LONG- TERM STORAGE

• Wine can be rapidly deteriorate if under inadequate conditions. Light, Humidity and temperature are the main factors that could harm the wine.

• Wine should be storage in a dark cellar, strong and directly sunlight will react with phenolic compounds and make wine faults.

• Too humid and too dry are not ideal for wine storage. 75% of the humidity in the air often cited as ideal environment.

• The most ideal temperature for storage and aging wine between 10 and 15 °C (Wikipedia, 2012).
