New Faces at Barton CreekWe are excited to introduce our newest members of your barton creek club team: Jennifer Galardi and MacKenzie Macdonald.
Jennifer joined us in January as our Wellness Program Di-rector. Jennifer is considered to be a leading influencer on fitness and nutri-tion, as well as a celebrity trainer and spokesperson educating consumers about healthy living. by bringing to-gether her knowledge and experience across multiple disciplines including fitness, yoga, meditation and nutrition, she has helped thousands of people find their path to wellness and good health.
MacKenzie has extensive back-ground in youth sports and recreation programming. During college he worked as Waterfront Manager for a resident summer camp. after college, MacKenzie went to work for Disney cruise line as a counselor in the youth activities department, and was ultimately promoted to youth activi-ties training coordinator, where he created and implemented the youth
activities training and development programs for the entire fleet, as well as Disney’s Hawaiian resort, aulani.

CLuB CHef tony diaz i love the rainbow baby carrots from Johnson's backyard garden, a local austin farmer! these baby carrots are naturally sweet and need little preparation. Simply wash, slice and place them in a heated pan with a dash of olive oil and garlic and quickly sauté until tender. Serve immediately and enjoy!
CHef Jerry GoodWinone of my favorite spring dishes to make is arugula pecan pesto. the recipe is simple and it freezes well, so you can make plenty and save it for a later date.1 pound arugula 2 cups toasted pecans 4 cloves garlic, minced 4 cups parmesan cheese salt and pepper to taste 4 cups extra virgin olive oilcombine all ingredients in a food processor to form a smooth paste. Store in an air tight container and freeze until ready to use. Enjoy on pasta, bread, chicken or fish.

Fresh Herbs & Fresh Honey Coming this Spring to Barton Creek Barton CreeK HerB Gardenour culinary team is excited to announce the barton creek Herb garden is currently underway. the herb garden will be located behind the 8212 Wine bar & grill (near the stairs to the Pavilion) and will feature oregano, Parsley, rosemary, Sage, tarragon, cilantro, Mint and Peppers. be on the lookout for some new dishes featuring our freshly grown herbs, as we will be using the herbs in our restaurants as well as in some of our spa services.
Honey Bee Hivesbarton creek is thrilled about our new partnership with central texas bee rescue to install an apiary (or honey bee yard) on property. the installation began last month and will be stocked with honey bees in late april, once the weather is warm enough. We plan to use the honey in our restaurants and spa. it will also be available for purchase in the hotel. in addition, every omni property in texas will also be installing apiaries, which will help rescue an additional 500 hives in both Houston and Dallas!

Summer Aerificationaerification is crucial to producing and maintaining a healthy turf—it relieves soil compaction, reduces the amount of thatch, and creates the ability to change or improve the soil profile. While necessary, it can be seen as an inconvenience to golfers, as it disrupts play and leaves the greens in less than ideal shape. to help mitigate these issues, this year we are aerifying each course two times
during the summer months, rather than three times in the spring and summer, as we have done in the past. by eliminating the spring aerification, we will not be disrupting play during our busiest and best time of year for golf. the courses will still be aerified twice during the summer, when play slows down, but will stay closed longer. Each course will be closed for 14 days during aerification, which will allow them to fully recover so they will be in much better shape when they reopen for play. Furthermore, the additional days give the grounds crew time to complete other projects that are difficult
to do while the courses are open for play. We do not anticipate difficulty with tee time availability during the course closures, but we will work to make special accommodations if necesessary.

1/2 cup honey3/4 cup olive oil3-4 drops hot pepper sauce1/4 cup fresh basil, minced
salt and pepper to taste1/4 cup fresh garlic, minced1 bottle Shiner bock2 ounces bourbon
1 1/2 pounds lean ground beef1/2 onion, finely chopped1/2 cup shredded colby or Monterey Jack cheese1 teaspoon soy sauce1 teaspoon Worcestershire sauce1 egg2 ounces Jack Daniels
1 packet dry onion soup mix (1 oz)1/4 clove fresh garlic, minced1 tablespoon garlic powder1 teaspoon parsley, chopped1 teaspoon basil, chopped1 teaspoon fresh oregano1/2 teaspoon fresh rosemary, crushedsalt and pepper to taste
combine ingredients in ziploc bag and let mahi mahi marinate overnight for 12 hours. remove mahi mahi from bag and grill. reduce marinade by half to use as sauce.
