CULINARY EXCELLENCE
With more than a decade of experience and
knowledge in his craft, Everett Williams
realized his passion of pastry in Chicago’s
Gordon Restaurant when the restaurant was
absent of a pastry chef and Everett volunteered
to stand in. It was then that he learned about
high-end dessert presentation and high quality
ingredients that would make him a solid
candidate for a position in the pastry kitchen
at the Four Seasons, Las Vegas. It was not long
before Everett’s talent and dedication were
recognized in Four Seasons, Las Vegas and
he was asked to open the Four Seasons
in the Bahamas. After an incredible tenure in
the Bahamas however, Everett decided to return
to Las Vegas where he was asked to join
MGM Resorts International as the Assistant
Pastry Chef of the Mirage Hotel. Within two
years in his position, Everett achieved his
current and most coveted position as
Executive Pastry Chef of the Mirage Hotel
overseeing all aspects of the pastry department.
Everett obtained an Associate’s Degree in
Culinary Arts from Kendall College and has
received many awards and praise for his
technical skills with wedding and specialty
cakes. Everett is a respected pastry expert and
has played a significant role within the Mirage
Food & Beverage team by always actively
looking for sweet creations and new innovative
techniques that will improve our pastry
selections here at the Mirage.
EVERETT WILLIAMSEXECUTIVE PASTRY CHEF
CHRISTIAN SCHMIDTEXECUTIVE CHEF
Chef Schmidt brings to The Mirage more
than 38 years of award-winning international
culinary experience, most recently at Terranea,
Los Angeles, where he served as Director of
Food and Beverage and Culinary Operations.
Originally from Germany, he has served as
Executive Chef at the Reunion Resort in
Kissimmee, Florida, Scanticon Hotel and
Resort (Denver, Colorado and New Jersey), The
Mandarin Oriental in Washington, D.C. and The
Ritz-Carlton in Dearborn, Michigan. In addition
to elevating culinary experiences, Chef Schmidt
has also played a key role in pre-openings and
openings. Responsible for not only kitchen
design and menu creation, Chef Schmidt
brought his extensive experience to the actual
development and design of several resorts such
as the Mandarin Oriental Miami, New York and
Washington, D.C. and the Fountain Café at
The Hotel Hershey Golf Resort in Pennsylvania,
as well as Reunion Resort, Scanticon Resort,
The Inn and Links at Spanish Bay Pebble Beach
and Terranea. Chef Schmidt has been featured
in several prestigious publications, including
Food and Wine, Gourmet, Condé Nast Traveler,
Elle and Travel Holiday. Chef Schmidt is also the
co-author of the cookbook, Viva La
Mediterranean.
JULIO CASTILLOEXECUTIVE BANQUET CHEF
Influenced by the rich heritage and culture of
his grandmother’s cooking, Executive Banquet
Chef Julio Castillo began his culinary career at
the age of 12 working for his family’s catering
business. With an inspiring emphasis on bright
and vibrant flavoring, Chef Julio quickly
developed a refined palate which continues
to influence his recipes to this day. Chef Julio
started his professional Las Vegas career as
the Master Cook and Saucier for the Rio Hotel
and Casino. At The Rio, Chef Julio refined his
cooking skills working with complex multi-
layered sauces for the resort’s fine dining and
banquet operation. Chef Julio was quickly
elevated to the role of Executive Sous Chef
for Rum Jungles LLC where he managed the
complete culinary operation for China Grill, MIX
and Rum Jungle at the Mandalay Bay Hotel and
Casino. Working with celebrity chefs such as
Rick Moonen, Hubert Keller and Alain Ducasse,
Chef Julio was invited to join the talented food
and beverage management team at Mandalay
Bay where he accepted the challenging position
of Banquet Chef, preparing meals for over
20,000 guests per day.

HOSPITALITY ORDERS The Catering Department can assist you with hospitalities for groups of 10 or more. There is a $30.00 per person food and beverage minimum exclusive of tax and service charge.
SET UP FEE, SERVICE CHARGE AND TAX There is a $100.00 setup fee for hospitalities. All food and beverage prices are subject to 8.25% tax, nontaxable 19% gratuity, and taxable 4% service charge.
ORDERS PLACED WITHIN 48 HOURS Same Day Hospitality Menus will be used for orders placed within 48 hours. Please consult with your Catering Manager at (702)791-7155 regarding delivery times. The Catering Office is open from Monday – Friday, 8:00 AM – 5:00 PM PST. The Catering Office is closed on Saturday, Sunday, and major holidays. Hospitality orders need to be finalized with the Catering Manager by 3:00 PM PST on the previous business day.
EXPEDITE FEE Food and beverage ordered within 48 hours of the hospitality start time will be considered a "short-term event" and subject to special menu selections and pricing. A $150.00 expedite fee will be applied to all orders placed within 48 hours of the function which will be in addition to all other applicable fees and charges.
FOOD AND BEVERAGE To ensure compliance with Clark County Board of Health food handling regulations, food will be consumed on the hotel premises at the contracted time. The Mirage Catering & Banquet Department is the sole provider of all food and beverages served in the suites. Food and beverage is not permitted to be brought into the suites by a guest or attendees. In compliance with Nevada liquor laws, The Mirage is the only authorized licensee able to sell and serve liquor, beer and wine on hotel premises. The Mirage reserves the right to refuse service to any person who appears to be intoxicated. No guest under twenty-one (21) years of age will be served alcoholic beverages.
In the event another licensee brings food or beverages into the suite, a corkage fee, 4% service charge, 8.25% tax on service charge and 19% gratuity will be assessed based on the retail price of the food and nonalcoholic beverages.
The corkage fee, 4% service charge, 8.25% tax and 19% gratuity for alcoholic beverages will be assessed according to the schedule below:

The 4% service charge is taxable at the prevailing tax rate of 8.25%.
Upon request, credit may be given for the beverage price on sealed, unopened bottles of wine and liquor only; however the nontaxable 19% gratuity and taxable 4% service charge will be calculated on the total food & beverage charge, exclusive of the credited item(s).
Group must request the credit in advance with the Catering Manager or at the conclusion of the hospitality when the food server returns to remove the remaining food and beverage.
GUARANTEE Guarantees must be given to the catering office no later than 12:00PM Pacific Standard Time, three (3) business days prior to the function. In some instances, additional advance notice may be required due to menu complexity, holidays, delivery or other factors. The number submitted shall constitute a guarantee, not subject to reduction, and charges will be made accordingly. Should client not notify The Mirage of a guaranteed number of attendees, The Mirage shall utilize the expected number as the final guarantee.

BILLING AND CANCELLATION POLICY a) A non-refundable deposit in the amount of 50% of the anticipated revenue is required by credit card at the time that you book your hospitality event with the Catering Manager. The booking is considered definite once the main contact signs and returns the catering contract, policies and credit card deposit. b) 14 days prior to the date of your hospitality, the remaining anticipated revenue is required to be paid in full by credit card or cashier’s check. c) If payment has not been received within the specified time limits, The Mirage maintains the right to cancel the hospitality and retain the deposit. d) MGM Resorts Accounts Receivable Department processes all of the deposits and prepares the final billing invoice. e) If the event is cancelled 14 days or fewer prior to the event, you agree to pay the liquid damages in the amount of 100% of the revenue.
LABOR CHARGES a) Dedicated chefs are available at $250.00 labor each based on a two hour function. There will be $125.00 labor charge for each additional hour. b) Dedicated food servers are available at $150.00 labor each, based on a four hour function. There will be $75.00 labor charge for each additional hour. c) Dedicated bartenders are available at $250.00 labor each, based on a four hour function. There will be $125.00 labor charge for each additional hour. d) Dedicated bartenders and food servers are required for liquor service for 30 people or more. e) Dedicated bartenders and food servers are required for wine and beer service for 50 people or more. f) There is a $150.00 labor charge for dedicated food servers for breakfasts, lunches, and receptions with 25 people or less

SIGNAGE AND DECORATIONS Signage or displays of any kind are not permitted in the hallways or foyers and nothing can be adhered to the guest room doors. The taping or otherwise affixing of any materials to walls, floors, or ceilings is not permitted. Display signs and/or decorations may not be used unless The Mirage has provided written approval for such items. If approved, the client agrees to be responsible for any damage caused to equipment or the suite.
SUITE ASSIGNMENTS Specific suite numbers are not confirmed in advance.
SUITE SETUP a) Suites are used in their existing condition. The Hotel does not permit furniture to be removed or rearranged in the suite. b) 6’x30” folding tables and banquet chairs can be rented by the Mirage. There is $150.00 rental fee for these furnishings. Please consult with your Catering Manager to coordinate your needs.

NOISE LEVEL Noise that could be disturbing to nearby guests is not permitted. Suites are not to be used for large events including DJ’s, and loud music. Sounds must be contained by keeping the suite door closed during the event.
INDEMNIFICATION Each party hereby covenants and agrees to indemnify, defend, save and hold the other party (including its parent company, subsidiaries and affiliates, and their directors, officers and employees) free, clear and harmless from and against any and all liabilities, losses, costs, expenses (including reasonable attorneys’ fees), judgments, claims, claims of copy infringement, administration of claims, liens and demands of any kind whatsoever caused by, resulting from or in any way connected with (i) the indemnifying party’s acts, omissions or negligence, or the acts, omissions or negligence of indemnifying party’s agents, contractors, or employees in connection with the subject matter of this Agreement including the indemnifying party’s breach of any of its representations or warranties set forth in this Agreement. With respect to Meeting Group, this indemnity obligation shall extend to the acts of its attendees within the Function Space. Notwithstanding the foregoing, the indemnifying party’s indemnity obligation shall not apply to the extent that any such liabilities are directly caused by the negligence or willful misconduct of the indemnified party.
MISCELLANEOUS a) Either party may be excused from its obligations to perform under these Hospitality Policies in the event that acts of God, war, government regulation, riots, disasters or strikes renders such performance objectively impossible or illegal. Under no circumstances shall an informational or recognitional picket line excuse a party from performance hereunder. The excused party is obligated to promptly resume performance in accordance with the terms of these Catering Policies after any such intervening cause ceases. b) The Mirage is not responsible for loss or damage to any property the organization or its guests bring to The Mirage before, during, or after the use of the facilities. c) Client agrees to all terms and conditions set forth upon signing food and beverage event order.
