Marriott Walker flash coolers are used bymany processors to cool a wide range of hotliquid food products in a prompt and efficientmanner.

A flash cooler cools liquid products byadmitting them into a vacuum vessel,operating at a temperature lower than theliquid to be cooled. The hot liquid "flashes" inthe vessel and promptly cools to the vessel'soperating temperature through theevaporation of water from the hot liquidproduct.

Flash coolers can be arranged in single ormulti-stage configurations and two differentdesigns are used, depending on the liquidproduct's viscosity.

Many liquid products, such as barbequesauce, salad dressings and condensed dairyproducts can be quickly and efficiently "flash"cooled when needed.
