� MACHINE OPTIONS � Optical sensors for non metallic trays and containers

� HOPPERS � Soft dough hopper. (Available in widths of 400mm, 450mm and 580mm)

Hoppers can be adapted for tray widths less than 580mm by special request.

Accessories for soft dough hopper:

� Intermediate gears. (These are used for allowing stiffer and more difficult mixes through a soft dough hopper. This allows the high speed and accuracy of the soft dough hopper to be used on stiffer mixes and may prevent the need for an additional hard dough hopper).

� Particulate gears. (These are used for depositing soft mixes containing particles e.g. chocolate chips ,nuts etc. The maximum size is in the region of 4mm – 7mm. Tests should be carried out to confirm requirements).

� Special permanent adaptation to different hopper widths. (If a non-standard hopper width is required, the hopper can be modified on a special basis to the required width).

� Hard dough hopper. (Available in widths of 400mm, 450mm and 580mm)

Two versions are available, the bronze and stainless steel unit for very hard dough and the lighter weight plastic and stainless steel unit for softer dough with large bore nozzles.

Accessories for hard dough hopper :

� Inserts for soft dough These inserts are used if softer dough is to be put through a hard dough hopper. Please contact MONO SALES if any of the above are required

PART B GUIDE TO TEMPLATES

Hard Dough Templates � Required for use with hard dough hoppers

Soft Dough Templates � Required for use with soft/intermediate dough hoppers

Standard Template –

For the production of simple forms such as drops, fingers and shells

� Large bore –

Stiff mixtures and soft mixtures

� Small bore – Softer mixtures (not restricted by smaller bore) Where greater numbers of products on a tray are required

Die Template –

For depositing pre-determined shapes through biscuit die plates nozzles

Rotary Template –

For the production of semi circular and circular forms and products requiring a whirled finish e.g. Choux rings, meringue whirls, nests and other specialist shapes.

� Standard rotary templates. These are used to create the

complex shapes that require movement of the nozzles.

� For non-standard tray widths templates can be made to non-standard pitches but these are likely to give uneven weights.

� Nozzle adapter for non-push fit nozzles allows standard nozzles to be screwed into the template instead of using push in nozzles. These are essential if using stiff doughs or high deposit speeds.

Sheeting Templates –For depositing sponge sheets onto

trays. Ideal for Swiss rolls and Genoese

� Adjustable sheeting template is more expensive than the standard version but saves buying several templates. It comes with graduated markings for easy adjustment and setting.

� Special for non-standard tray widths can be manufactured although it will cause weights on the edges of the tray to vary as the template changes from the nominal hopper width. This problem can be overcome with a special hopper width modification.

� Multiple strip sheeting templates can be made with multiple slots for making rectangular products, shape or for topping cakes.

� Auto cut off / reduced drip template is used to minimize drips when sheeting or for helping to cut off mixes that might get stretched as the tray is moved away.

Non-standard Special templates.

� Standard design with non-standard pitch nozzles are altered to customers specified centres. This method is likely to give uneven weights.

� Taper templates, standard to non-standard pitch.

By sloping the feed to the nozzles, weight problems found when changing from standard pitches can be reduced. The accuracy of weights will be dependant on the type of mix used. Metering can be added to reduce these affects.

� Templates for depositing multiple rows. To speed up the depositing process, templates can be made to deposit two or more rows at a time. These are only beneficial for certain products – advice should be sought.

Staggered Template –

Ideal for filling baking tins with sponge

� These are used for filling two rows of tins that do not share the same centres.

Die Template –

For depositing pre-determined shapes through biscuit nozzles

Specials

� Cluster heads are used for decorating cakes, patterns or making meringue shapes. These are mix dependant and tailored to suit the application required.

� Injection heads are used for injecting jam etc. into cakes.

PART C GUIDE TO NOZZLES

� Standard Plastic nozzles Should be used for soft dough applications and some intermediate dough applications. Can be used in conjunction with standard templates and rotary templates fitted with nozzle holders

2 STYLES AVAILABLE: ROUND – gives an even finish to the product.

STAR – gives a patterned finish to the product

� Straight & offset nozzle holder Nozzle holders provide the means of attaching standard plastic nozzles to the soft dough rotary templates To be used in conjunction with the soft dough rotary template, for both soft and intermediate dough applications. NOTE. Some intermediate dough’s may force these nozzle holders out under pressure. Use the metal nozzles to stop this.

� Hard dough small bore nozzles. These are used when putting soft dough through a hard dough hopper. Only use these when it is impossible to use the large nozzles. The backpressure in the small nozzles restricts the rate of feed and type of mix that can be used, but allows a greater number of deposits on the tray.

� Metal nozzles Should be used for intermediate and hard dough applications
