WHITE & PURPLE ASPARAGUS

White Asparagus comes from the process of

etiolation (deprivation of light) the plant can

not produce chlorophyll without light. This in

turn does not allow the asparagus to become

green.

White Asparagus is considered to be slightly

milder in flavor and a bit more tender than

green asparagus.

Available throughout the year.

Purple Asparagus has a peak season

from April to May and September to

November, though it is sporadically

available throughout the year.

It has 20% higher sugar content than

other varieties of asparagus as well as a

low levels of fiber.
