IntroductionIt’s hard to believe it’s been 10 years since Sheila and I teamed up to pen the first book in the State Hometown Cookbook Series—Tennessee Hometown Cookbook. Since then, the series has grown to include editions for Georgia, South Carolina, Mississippi, Texas, Louisiana, West Virginia, and now Alabama. Each book in the series has been a joy to write as we learn about each unique state and get to know the people.

Alabama Hometown Cookbook will always hold a special place in my heart. Shortly after we began work on the book my mother Arleta Whitaker—born in Wylam, Alabama—suddenly fell ill then passed away just before Thanksgiving. Soon after, my dad suddenly passed days before Christmas. Just weeks before we lost her, I was working with Mom discovering recipes for dishes from my childhood. Reading the recipes in hand was like coming home and I had a promise from Mom to dig out more on my next visit. She kept her promise. When my brothers and I were sorting through her kitchen, we found where she had gathered several more Alabama recipes as well as the recipe box from her parents’ house in Wylam.

Creating a cookbook takes time and patience. When I started the book, Mom was fully able to help me with recipes and stories. I continued to compile the book over the period of Mom and Dad getting sick to their passing. As I finished the book, we were settling their estate. Alabama Hometown Cookbook has been an emotional two years in the making with every dish opening a memory. I found, though, as the recipes flowed—from my brothers, cousins, extended family and friends—the book became a vehicle for my healing.

Sheila and I received many great recipes from people across the state. In addition to recipes from my family, many came from my wife Ally’s mom, Joan Nagem, and family from Auburn and Opelika. Sheila’s ties to Alabama—her grandparents had a house in Birmingham for many years eventually moving permanently to a beautiful place on the Coosa River surrounded on three sides by water—meant a number of recipes were submitted by her family. As with other books in the series, many other cooks across the state sent us their favorite recipes.

Each state has a culinary heritage that creates one slice in the pie of our nation’s culinary history. Alabama is no different. You can certainly expect to enjoy some good, old-fashioned cooking with recipes for Mom’s Shortbread, Summer Cucumber Dip and Plate Licking Meatloaf. Bloomin’ Onion Bread, Barbecue Shrimp and Dreamsicle Cheesecake on your table will bring you raves from your family.

From Daytona Chicken to Southern Tea Cookies, Jalapeño Popper Chili to Summer Strawberry Pie, Pepper Jelly Cheese Straws to Honey Tomatoes and Goat Cheese to Loaded Shepherd’s Pie, you will discover excellent recipes for new creations as well as those that have been handed down for generations.

This book wouldn’t be possible without the help of many people. I dedicate this book to my mother Arleta Campbell Whitaker of Wylam, as well as my dad Eli M. Whitaker. Dad may have been a Mississippi boy, but he introduced me to fishing off Orange Beach and Magnolia Springs. Mom and Dad spent countless summers traveling the great state of Alabama with three young boys in the station wagon.

Pepper JellyFrom Kent: This recipe is from my grandmother’s collection. I tried it using store-bought chopped jalapeños with very good results. I skipped the red pepper, doubled the jalapeños and skipped blender step.

½ cup chopped pickled jalapeño peppers½ cup chopped seeded sweet red pepper1 cup cider vinegar, divided1 (1-ounce) package unflavored gelatin¼ cup cold water3 cups sugar

Combine jalapeño peppers, red pepper and ¼ cup vinegar in food processor or blender and process until almost a thick liquid. Sprinkle gelatin over cold water in a medium saucepan; let stand 1 minute. Stir over low heat until gelatin is completely dissolved, about 5 minutes. Next, add pepper mixture, remaining vinegar and sugar. Bring to a boil and reduce heat. Simmer, uncovered, for about 3 minutes while you stir constantly. Pour into sterilized jars and allow to cool slightly before covering and storing in the refrigerator.

Pepper Jelly Spread1 (8-ounce) package cream cheese, softened 1 (7.33-ounce) box Lance Captain Wafers½ teaspoon honey, optional1 (4-ounce) jar Mama Nem’s Pepper Jelly

Spread cream cheese on Captain Wafer, spoon pepper jelly on top and enjoy. (If desired, add honey to cream cheese and whip before spreading on cracker.)

Pepper Jelly Cheese Dip2 cups shredded Cheddar cheese2 tablespoons minced green onion2 cups chopped pecans½ cup mayonnaise1 (4-ounce) Mama Nem’s Pepper Jelly

Mix first 4 ingredients in a large bowl until blended. Press mixture into a shallow dish lined with plastic wrap; chill until firm. Unmold onto plate and top with pepper jelly. Serve with wheat crackers.

Pepper Jelly FestivalThomaston • Last Saturday in April

The west Alabama rural town of Thomaston, a community of less than 400 people, is tucked away in the heart of the traditional Black Belt region of the Deep South. Known for its fertile, rich, dark soil, the Black Belt provides our local Deep South Food Alliance farmers with the finest quality produce, including the peppers often used to make Mama Nem’s Pepper Jelly, a famous regional delight. The delicious pepper jelly has become one the region’s favorite foods, so much so, that in recognition, an annual celebration is held the last Saturday in every April, known as the Pepper Jelly Festival. The community of Thomaston, through the Alabama Rural Heritage Foundation, sponsors the event.

The festival promises a combination of the best in music, delicious food, including good ole’ Thomaston barbecue, unique crafts created by the best of vendors and other outdoor activities.

In a bowl, incorporate oil into vanilla yogurt. Enjoy with your favorite fruit.

Pour tuna in a mixing bowl (do not drain). Sprinkle with dill, salt, pepper and parsley; mix. Add cream cheese and mayonnaise; mix well. Chill in fridge for 3 hours or until party time. (For a party of 10, use 6 cans tuna.)

Summer Cucumber DipThis Summer Cucumber Dip is an easy appetizer that you can double to serve at a church dinner or potluck.

2 tablespoons grated onion¼ cup grated cucumber1/3 cup mayonnaise1 (8-ounce) package cream cheese, softened

Combine ingredients in a bowl and mix well. Cover and chill before serving. You can add additional cucumber, if desired, as well as bacon bits or finely chopped red peppers for color.

Donna’s Taco Salad DipFrom Kent: I met Donna, owner of Atco Transmission in Montgomery, and her son Hunter several years ago when I first began reporting about racing. She offered up this tasty dip saying it was “one of Hunter’s favorite foods!”

1 (1.25-ounce) package taco seasoning mix2 (8-ounce) packages cream cheese, softened1 (16-ounce) carton sour cream1 (8-ounce) package shredded lettuce1 tomato, chopped1 (4-ounce) can chopped olives1 (8-ounce) package shredded Mexican blend cheese1 (16-ounce) bag tortilla chips

In large bowl, blend taco seasoning mix, cream cheese and sour cream until mixed well. Spread on serving plate or dish. Top with chopped lettuce, tomato, olives and shredded cheese. Garnish sides of dish with tortilla chips and serve.

Hot Mexican Chicken Dip2 cups cooked and chopped chicken breasts 1 (10-ounce) can Rotel tomatoes½ cup light (or fat-free) mayonnaise1 (8-ounce) package fat-free cream cheese, softened1 (12-ounce) package shredded Mexican blend cheese1 teaspoon garlic powder2 teaspoons chopped onions

Mix all ingredients in a 2-quart casserole dish and bake at 350° until bubbly, about 20 to 25 minutes. To make the dish more attractive, add shredded cheese on top just before removing from oven. Serve with corn chips or tortilla chips for dipping.

HIPPY’S Big Butt BBQ BashMonroeville • April

HIPPY’S Big Butt BBQ Bash fundraiser is a BBQ cooking competition offering more than $3000 in cash and trophies. It begins on Friday with a VIP party for the cooking teams, sponsors and HIPPY board of directors. Teams compete for bragging rights and prizes for the Biggest Butt grand champion, plus 1st, 2nd and 3rd in three categories: butts, ribs and chicken. The event is held at Whitey Lee Park in Monroeville. Barbecue plates are

for sale, and you will enjoy a kids zone, entertainment and a live auction featuring unique celebrity collector items, one-of-a-kind life experience trips, as well as local merchant items. Rocoto Black Bean Dip1 (15-ounce) can black beans½ cup fresh oregano2 teaspoons rocoto pepper purée (available in Latin supermarkets or online)1 (8-ounce) carton sour creamSalt and pepper to tasteCherry tomatoes, for garnish

Drain and rinse black beans; purée with oregano, pepper purée and sour cream. Refrigerate 2 to 3 hours. (Best if chilled overnight allowing oregano to bloom.) Garnish with chopped cherry tomatoes and oregano just before serving with pita chips. Serves 8 to 10.

Salsa Senorita’s Salsa Ranchero6 slices bacon, cut into ¼-inch pieces 4 medium tomatoes, finely diced1 jalapeño pepper, destemmed, deseeded and finely diced½ cup Salsa Senorita, any variety1 medium onion, finely diced1 clove garlic, minced½ teaspoon cumin½ teaspoon salt¼ teaspoon pepper

In a skillet, cook bacon until done but soft (not crisp). Add remaining ingredients and bring to a boil. Reduce to simmer, cover and cook 10 minutes. Remove from heat and serve hot over your morning eggs (huevos rancheros), tamales, beans (frijoles) or potatoes (papas). Also delicious served cold with tortilla chips for dipping.

Loaded Cheese Dip1 pound ground sausage, hot or mild1 (10-ounce) can Rotel tomatoes, undrained1 (16-ounce) package Velveeta, ½-inch cubes½ cup finely chopped onion½ cup finely chopped red bell pepper

Brown sausage; drain. Combine with remaining ingredients in a slow cooker. Set slow cooker to low and cover. Stir occasionally as cheese begins to melt. Serve hot when fully melted.

Ally’s Jalapeño Pimento CheeseFrom Kent: My wife loves a good batch of pimento cheese, especially if it has a twist to it. Here’s her recipe for Jalapeño Pimento Cheese.

1 (1-pound) block Cheddar cheese1 (4-ounce) jar pimento, drained (save juice)1 tablespoon sugar or Stevia1 tablespoon apple cider vinegar1 to 1½ tablespoons mayonnaise1 tablespoon finely chopped jalapeño peppers2 teaspoons hot sauceSalt to taste

Shred cheese into a large bowl and combine with remaining ingredients; add about a teaspoon reserved pimento juice. Mix well, adding more mayonnaise and pimento juice to taste. If you use store-bought chopped jalapeños, consider adding some juice from the jar for extra heat. Cover and refrigerate for an hour or longer before serving.

Granny’s Hot Artichoke DipFrom Kent: This recipe is from my grandmother’s recipe collection. It’s a very nice cool weather dip that’s perfect with chips, crackers or veggies.

1 (14-ounce) can artichoke hearts, drained and chopped½ teaspoon garlic powder¾ cup mayonnaise½ tablespoon Worcestershire sauce1 cup grated Parmesan cheese ¼ cup shredded Cheddar cheeseSalt and pepper to taste

Combine all ingredients and place in a prepared 1-quart glass baking dish. Bake in a preheated oven at 350° for 20 to 25 minutes, or until bubbly. Serve warm with your choice of chips or crackers.

Crab Shrimp Appetizer1 cup cooked and cleaned shrimp 1 cup diced celery½ cup chopped green bell pepper2 tablespoons finely chopped onion1 (6-ounce) can crabmeat, drained (or fresh boiled crab, flaked)½ teaspoon salt1/8 teaspoon black pepper1 teaspoon Worcestershire sauce¾ cup mayonnaise 1 cup soft breadcrumbs 1 tablespoon butter, melted

Combine all ingredients, except breadcrumbs and butter. Spread in a 1-quart casserole or individual baking dishes (ramekins). Combine breadcrumbs and butter; sprinkle over casserole. Bake at 350° for 30 to 35 minutes (20 to 25 minutes for ramekins). Serves 4.

Crabmeat Bacon RollsThese can be made ahead, frozen, thawed and broiled. These are always a favorite at parties.

½ cup tomato juice 1 egg, well beaten1 cup dried breadcrumbs1/8 teaspoon each: salt and pepper½ teaspoon chopped fresh parsley ½ teaspoon chopped celery leaves1 (6-ounce) can crabmeat, drained and flaked12 slices bacon, halved

Mix tomato juice and egg; add breadcrumbs, seasonings, parsley, celery leaves and crabmeat. Roll into finger lengths; wrap each roll with 1/2 slice bacon and fasten with toothpick. Broil, turning frequently, until bacon is crisp and evenly brown, about 15 minutes. Makes 2 dozen rolls.

Chicken Cheese BallThis is a really great recipe that you can add all kinds of things to for added flavor, such as jalapeños, or switch the chicken for crab or minced shrimp. The trick is the cream cheese and dressing mix. After that, it’s wide open.

1 (12.5-ounce) can chicken, drained1 (1-ounce) package dry ranch dressing1 (8-ounce) package cream cheese, softened1 dollop sour cream½ cup chopped pecans

Mix all ingredients together, except pecans. Roll in chopped pecans. Serve with Wheat Thins.

Pan con Tomate1 baguetteOlive oil1 teaspoon salt1 teaspoon pepper8 cloves garlic4 large ripe tomatoes8 to 10 slices Serrano ham 1 pound Manchego cheese, thinly sliced1 cup arugula

Slice baguette in half. Brush with olive oil and season with salt and pepper. Grill baguette halves. Once grill marks are present and baguette is lightly toasted, remove from grill. Use a microplane to grate garlic. Rub grilled bread with grated garlic. Cut tomatoes in half and rub over open baguette halves allowing grilled baguette to soak up juices from tomatoes. Alternately, layer ham and Manchego and top with arugula. Drizzle with olive oil to finish. Serves 4 to 8.

Healthy Popsicles3 cups watermelon purée½ cup fresh blueberries½ cup chopped fresh strawberries1 kiwi, peeled and sliced1 peach or nectarine, diced smallHandful fresh cherries, pitted and chopped

Cut watermelon into chunks and purée in blender until smooth; set aside. Fill 1 dozen popsicle molds with chopped fresh fruit; pour in watermelon purée until each mold is full. Place a popsicle stick in each one. Freeze for 6 to 8 hours. When ready to serve, run popsicle molds under warm water for a few seconds and pull each one out.

Caramel Peach Cheesecake Ice CreamPeach Purée:2 pounds white peaches (mix of ripe and firm), peeled and diced1 cup sugar1 teaspoon caramel flavoring

Combine all ingredients and simmer over low heat until peaches are tender. Remove and purée until mostly smooth. Set aside to cool completely.

Ice Cream: 2/3 cup sugar 2 cups heavy cream2 cups milk, divided1 teaspoon vanilla 4 egg yolks1 (3.4-ounce) package instant cheesecake pudding1 small New York Cheesecake, cut into small chunks (about 1½ cups worth)

Combine sugar, heavy cream, 1 cup milk and vanilla in a saucepan; bring to a boil. As soon as mixture boils, remove from heat and set aside to cool slightly. In a separate bowl, whisk egg yolks. While whisking, slowly stream about a third of the boiled cream mixture. While whisking remaining cream mixture, stream in egg and cream mixture. Return to heat and cook, stirring constantly, until mixture thickens. Remove from heat and cool completely. In a separate bowl, whisk reserved 1 cup milk with cheesecake pudding. Whisk into cooled mixture. Transfer mixture to ice cream maker and freeze. After ice cream begins to freeze (but not completely ready), remove to a bowl. Fold in Peach Purée and chunks of cheesecake. Return to freezer container and continue to freeze until firm.
