We realize that changing from one type of menu quickly to another may confuse a lot of you and to tell you the truth, it confused some of our staff as well.

So, we’ve brought back the set meals that many of you enjoyed from before and included prices for all of the items by themselves as well.

Yes, a few prices went up since our last, last menu but most of those are centered in our side dishes. We’ve bit the bullet on margins when it comes to our sets so you all can

enjoy the convenience of a whole plate of food for one price. For those of you who like to mix and match your own creations please carry on.

Our same rules apply though; we will give you the most in quality that is possible for the price. This I

THE STEAKS

Ah steaks, now let‟s get down to the meat of the matter. There is so much information and

misinformation floating around about steaks these days that some things you think you know

one day, you hear exactly the opposite the next.

It‟s very easy to be confused and it is even easier to be misled. Most times it isn‟t even

done purposely, the seller just doesn‟t have enough knowledge themselves, so they pass on

what little they know and make up the rest. As they say, a little knowledge is a dangerous

thing.

Basically, what we‟ve been taught and what we have found is this:

BULLS v/s STEERS

You have BULLS and you have STEERS. A STEER is merely a BULL that has been

castrated. By denuding the male, a hormone is no longer produced by the animal and

the meat becomes less tough. STEERS are preferred in any quality classification as

STEER meat is more tender than BULL meat and usually more expensive.

THE CUT

The cut of the beef helps to determine its tenderness and flavor as it depends on how

much that particular part of the cattle was involved in the cattle‟s movement while it

was moving about. Like you or me, a muscle well developed might be tougher than one

not used too often. The least used cut by the steer is the tenderloin so it happens to

be the most tender cut from the cattle. The ribeye is actually two different pieces

joined together. Both are very tender.

BEEF GRADING

BEEF GRADING varies from country to country. In the USA the USDA (United States

Department of Agriculture) determines the grading. For our purposes, we‟ll only mention

the USDA‟s top two levels, which are PRIME(less than 3% of all USDA graded beef is

Prime), the highest and CHOICE. In Australia you have basically PRS and PRB, Prime

Steer and Prime Bull, S (Steer) Grade, in New Zealand there is PS and PB and lesser

grades. Beef grading is almost always done after the cattle is slaughtered.

FROZEN V/S CHILLED

FROZEN beef is generally of a lower quality than CHILLED. So you would find more FROZEN

PB (Prime Bull) than PS(Prime Steer) unless there is an over or under abundance of either in

the market. Chilled is preferred as the natural juices won‟t run out in a thawing process.

FEED

How are the cattle fed? I was told by a customer proudly that he only ate “grass fed”

beef. Well, most cattle are grass fed as it is the less expensive way to feed cattle.

Then there is grain fed. BUT, in Australia and New Zealand they will most likely use

grains such as wheat, barleys and such while in the USA they use corn exclusively. The

flavorings are different and the effect of the different grains on the meats themselves

are different. Then there is the length of time the cattle are fed the grain. They may

be on grass for most of their growth cycle and only switched to grain for fattening for

60 days, 120 days, 180 days and so on. Since the grains are more costly than grass,

the more grain the more the beef will cost, usually. And since corn is usually the more

expensive grain, American beef is usually pricier as well.

AGEING

Ageing is another factor. This doesn‟t refer to the age of the cattle when it is

slaughtered but rather the time the beef is allowed to age after it is slaughtered.

Beef mellows and softens as it ages. What is the difference between spoilage and

ageing? Conditions, temperature, humidity and knowhow. Generally, beef is better if it

is aged before marinating or cooking. As aging takes time and must be done under

controlled conditions, it adds to the price of the beef as well.

CATTLE BREEDS

Strains or breeds of cattle such as Wagyu or Black Angus also help to determine how

the meat will be formed. Not only are these types of cattle bred a certain way but

they inherently have certain characteristics that might make their meat more dear on

the market.

MARBLING

The higher the quality of most beef the more marbling, or lines of fat running through

the meat it will have. This marbling does at least two things; one, as the meat cooks

this fat renders out of the beef making the meat tenderer. Second, a lot of the flavor

from feeding goes into the fats so the more marbling, the more flavor will render into

the meat while it cooks as well. Wagyu is even rated by its Marble Score (MS). This

MS system, which started in Japan has now taken off in Australia.(What a can of

worms this starts! I have seen so many amateur “experts” blogging about the 6-7 or

the 9 they ate and comparing who is serving what and what MS. Each Wagyu farm

develops different cattle so MS is only the tip of the iceberg, as they say. It‟s the

farm that matters the most as that is where the flavor of the beef will be instilled)

And all you wanted to do was go out and enjoy a simple steak. Maybe not as simple as you

thought eh? Consider this; the Australians have imported Wagyu from Japan and cross bred

them with other cattle. They are then bred again with these Wagyu breeds until there is at

least 51% Wagyu in the cattle and can be called Wagyu again. Thus you can find Wagyu that

has a MS 9 with a fairly flat taste and a USDA Prime that is infinitely more flavorful.

Too much for you to swallow? Maybe so. We are just hoping that the more you know, the

more you will understand what we are offering you for your hard earned money.

We have made the switch to NZ beef because in our opinion (Jake‟s), the NZ PS quality

ribeye is tastier than the Australian. We aren‟t saying that the Australian is bad mind you,

only that the NZ tastes better. We hand marinate these to make them even

more tender and to bring out the true flavor of the beef we DO NOT USE

artificial flavorings, tenderizers or MSG.

SOUPS

CHICKEN GUMBO REG. $5.00 LG. $7.00 Chicken Gumbo is a real Louisiana, USA style soup. In Cajun French gumbo means soup. This

gumbo is made with a traditional roux* to make it hearty. It is slowly simmered with Cajun

vegetables, spices, herbs, smoked turkey sausage and chicken. Some people claim that it has

a medicinal effect like for sore throats or flu but some people will say just about anything. I

just think it‟s really good and I like it most when it‟s raining outside and there is a chill in

the air. Elias, our Area Manager asked me to put the word “rice” in here. R I C E. How‟s

that? There‟s rice in here too, that‟s the way it‟s eaten in Louisiana. (A small taste is

available at no charge)

SHITAKE MUSHROOM SOUP REG. $3.50 I had to make up this version of soup quite a few years ago because I didn‟t know how to

make it. Florence makes it now and it tastes really nice. This is a full whole cream soup with

fresh shitake mushrooms and A LOT of flavor. Very rich, velvety and filling for a soup y‟all.

Rod Montero‟s favorite.(a small taste is available at no charge)

WHOOPASS© CHILI CON CARNE REG.5.50 LG. $7.50 Okay, so this is not exactly a soup. So what would you call it? How about a spicy fragrant

minced beef stew with beef, tomato, onion, spices and a little jalapeno for a little oomph?

SOUP OF THE DAY $3.50 Well, we, being who we are and you, being who you are, we had to source out some

exceptional tasting soups for you to enjoy on a daily basis. It couldn‟t be runny flavorless,

chemical enhanced or mediocre. I do believe these will fit the bill. Check out the Soup of the

Day at the front counter.

BAR-B-QUED CHICKEN WINGS $1.70ea. (MIN. 3 PER ORDER) Amazing what you can do with some large chicken wings. Wonder why chickens never did

anything with „em. Like I said, large chicken wings are marinated in our mix of spices and

then char-grilled till they are just nice. A little of the Botak‟s garlicky BBQ sauce slathered

on them and TA-DA! There you go. Here we are! (WHY NOT ADD A COUPLE OF SIDES AND

MAKE ‟EM A MEAL?)

STUFFED JALAPENOS (CHILIES) $7.00 You get five of these spicy, spicy guys. We make these from real Mexican jalapenos, stuff

them with mozzarella cheese and then we have the nerve to bread them with Japanese bread

crumbs. They are deep fried until the outside is crispy and the inside is gooey and messy.

SALADS Hi, the smaller price reflects a small salad and the larger price represents a large salad. I just

thought that you should know. You might also like to know that we offer our own salad dressings. You

might like to know that they are 1001(only1000 islands couldn‟t cut it) Island and Mustard Vinaigrette. Oh

yeah, almost forgot, the Caesar Salad comes with our own anchovy Caesar dressing. I think that‟s it.

Yeah, that‟s it.

HOW‟S SALAD? $3.00/$5.00 This is usually referred to as a green or tomato salad but I don‟t know why it would be

referred to as a tomato salad as tomatoes only a portion of it. This one should have FRESH

iceberg lettuce(totally out of fashion but tasty), tomato, carrot, sliced fresh cucumbers,

sliced black olives, onion and a little feta cheese.

TUNA SALAD $5.00/$7.50 With some tuna/mayo on the top of a How‟s Salad, it brings forth a delightful conglomeration

of tastes and textures. I think that is how they might describe it in a food review. Maybe

not though.

EGG SALAD $4.00/$6.50 This one has egg/may on the top, which is why we named it as such. Trippy!?

CAESAR SALAD $4.00/$6.50 This is a genuine Caesar with anchovy in the dressing, not on the salad. FRESH romaine

lettuce, tomato, our own baked croutons, turkey bacon bits and real parmesan cheese, not

the parmesan flavoring some places like to put in their dressing.

CAESAR w/ SLICED CHICKEN or FISH $10.00

CAESAR w/ SLICED CHAR-GRILLED SALMON $16.00 In the past, some people have mentioned that the Caesar with chicken might be the best

salad they have ever eaten. Now I don‟t know if they were saying this to be nice because I

was the boss or because it was true. It‟s very easy to find out though.

FRIES We bring crinkle cut fries in from all over the world so they may be a little different in consistency

as each country‟s potatoes have different consistencies.

Variety, variety, variety, you can‟t say that Botak Jones doesn‟t give you variety. Okay, maybe you

can. Our fries are fried in 100% non-hydrogenated palm oil. No cholesterol or Trans fats, so they

say.

SPICY FRIES REG. $3.80 LG. $6.00 XXL $8.00 We make our own spice mix here at Botak Jones. We tend to put it on the fries when they

come out of the fryer along with some salt to bring out the spice‟s flavors. We‟ve been doing

this since 1997. We DO NOT use MSG or flavor enhancers. If you are ordering for children,

you may want to order the fries without spice and we‟ll just salt them. If we make a mistake

and send them out spicy, PLEASE don‟t get too mad at the staff, that‟s my job. Just let

them know that they screwed up and they will happily replace them. HAPPILY.

CHEESE FRIES REG. $6.00 LG. $9.00 When someone invented cheese fries a long time ago. No one made any artificial chemically

enhance liquid cheese to use for fries or nachos. They would just melt real cheddar cheese on

and throughout the fries. As the cheese cools, it gets harder. That‟s what REAL cheddar

cheese does you know. This is how we make our cheese fries. THE CHEESE WILL GET HARD

BECAUSE IT IS REAL CHEDDAR CHEESE, NOT ARTIFICIAL LIQUID CHEESE

SUBSTITUTE. Okay?

These are available on either focaccia or whole wheat bread and come dressed with iceberg lettuce,

EGG SALAD (MAYO) SANDWICH $4.00 $6.00 About two eggs worth of egg/mayo with the lettuce, tomato and onion.

I love these.

TUNA SALAD (MAYO) SANDWICH $5.00 $7.00 I have a strong liking for these as well. I think I just like sandwiches.

AYE CARUMBA! $6.00 $8.00 This is a combo sandwich with both tuna and egg salads on it! I love this one the

most and it‟s the messiest. The name? Hey! I had to call it something and Ricky

Ricardo from “I Love Lucy” just came to mind. Go with it.

NOT YOUR AVERAGE CHEESE SANDWICH $5.50 $7.50 We take all the different cheeses we use and melt them on the bread of your

choice. It comes with the veggies named above and mayonnaise, a key ingredient.

SMOKED TURKEY SANDWICH $8.50 $10.50 This has enough sliced turkey in it so that you know what you‟re eating! 130 grams

of imported smoked turkey breast and it ALSO comes with mayonnaise. I

recommend adding some yellow mustard to it as well and you‟ll be whistling “Dixie”.

SLICED BEEF SANDWICH $9.50 $11.50 We trim, marinate and char-grill whole striploins. We then slice them very thin, add

some of Florence‟s Brown Gravy and serve it on your choice of bread.

GAMMON HAM AND CHEESE SANDWICH $10.00 $12.00 Thinly sliced imported Gammon Ham is heated with a topping of sliced Cheddar cheese.

Maybe our most requested sandwich. Really.

THE BOTAK BURGER $6.00 $8.00 This is a 135 gram* patty dressed. It should come to you juicy and tender.

Don‟t linger, burgers will tend to dry while they rest. Aw, do what you like

THE DOUBLE BOTAK $10.00 $12.00 You‟ve got it! Two 135 gram* patties on this one.

U-CRAZY-WHAT?! $13.00 $15.00 What started out as a joke has kind of become a signature of Botak Jones.

This IS crazy! Three 135 gram* patties on one burger! Hell, you have to

be an acrobat just to carry it out from the kitchen! That‟s 405 grams*

of beef y‟all.

THAI BURGER BEEF $7.00 $9.00 I love the food in Thailand! What to do, Even if you have an American food joint,

I guess you can at least make what you like. A Botak topped with melted

Mozzarella cheese then topped with Thai Chili Sauce and chopped Fresh coriander.

Burger Only

THE MASSIVE© $7.80 $9.80 5 inches of really good burger here. This is a 220 gram* pure beef patty

that takes up every bit of the 5 inch bun we serve it on. We know there

are probably bigger patties out there but big isn‟t enough; it‟s got to be

good eating. You decide for yourself, Time Out already has.

THE MASSIVE© CHEESE $9.80 $11.80 For the MASSIVE© burgers, we have to offer them with the add-ons already

on them because they are so big, the normal add-on just isn‟t enough to

cover these monsters. Take this one for instance; it comes with four

slices of cheddar cheese! Make sure you work out tomorrow.

THE MASSIVE SUNRISE© $13.80 $15.80 This is more like a breakfast burger. That is if the only meal you eat all

day long is breakfast. Okay, here we go; 220 gram* patty, four slices of

cheddar cheese, four rashers of sliced Canadian streaky bacon and two

Sunny Side Up eggs. The eggs are made when the burger is char-grilled,

not in the morning before we open up. So they will run when you break

the yolks. Isn‟t it GREAT!!!

THE MASSIVE© CHEESE/WHOOPASS©/EGG$13.80 $15.80 The name doesn‟t do this one justice. It‟s awesome, and who really likes

to use the description “awesome” anymore except for pop stars? The patty,

four slices of cheddar cheese, 230ml. of Whoopass© Con Carne and TWO

Sunny Side Up eggs on top of that. Whew!!!

THE MASSIVE© PROVOLONE MUSHROOM $16.80 $18.80 Why leave the best for last? Because it‟s the best you know! Everything on this

one is ex so that‟s why the burger is kinda ex but worth every cent. We sauté

equal amounts of sliced FRESH shitake and sliced FRESH, not canned, button

mushrooms with butter, garlic and onion. We then melt four slices of Provolone

cheese over them. OMG!!!!!!

to constantly add flavor and then, when the inside of the chicken is just about done, but

“THE” FISH BURGER $6.00 $8.00 I try not to be arrogant in anything I do, except maybe while playing ping pong.

But what can I say about Botak Jones Fish Burger? It‟s not square or round or

any other pre-made shape. It is a whole premium white basa fillet cut into two

and piled on a bun with veg and our own tartar sauce. It is so satisfying that

after eating it, you‟ll feel so satisfied (you might chuckle here).

THE VEGGIE BURGER $4.00 $6.00 We looked HIGH, we looked low we looked everywhere and tried so many

combinations; I thought that we would go crazy. Well, I went crazy anyway, but

not because of this. Thanks to Mr. Thian, we have a vegetable burger patty I am

not afraid to put on the menu. It has our spices along with Mr. Thian‟s soy

protein and mushrooms, to give it some bite! It tastes good with cheese or

any topping and condiment. Whew, at least one thing off of my mind!

SWANKY FRANKY $11.00 I‟ve been amazed by these ever since I first tried one as a child in a deli

on Livernois Ave. in Detroit, USA. This is either a GIANT beef or chicken

sausage that is wrapped in Canadian streaky bacon and topped with melted

cheddar cheese. Now THAT‟S what I‟m talking about!

CAJUN CHICKEN HOT DOG $5.50 $7.50 These are made for us using our own Cajun Spice. They have a sheep casing

so almost anyone can enjoy them as well. A little added spice and a little

snap to the bite. Now this is what a hot dog is all about! They‟re a little

on the long side too (for those who appreciate length as well as girth).

People know of us for a multitude of reasons. One of the reasons they know of us is our

Cajun Chicken. Never mind that Bernie is the first in Singapore to offer an authentic Cajun

chicken, never mind that Bernie spent 15 years in the south of Louisiana where the Cajun call

home and never mind that chicken breast is arguably the best source of soluble protein. It

just tastes really, really good! A whole chicken breast laboriously marinated, char-grilled and

topped with real mozzarella cheese and our own Cajun sauce. NO flavor enhancers,

MSG or chemicals are used in its preparation, only pure natural ingredients.

A bit of local flavor at Botak Jones? Yeah, well, what to say, what to do? I love

things with black pepper flavor. These breasts also come out tender and moist with

a lot of flavor. They are garnished with our shitake/pepper sauce.Again, they are

seasoned, not flavored with real black pepper, actually two kinds of black pepper.

Not some of that bottled flavoring stuff.

We ask our suppliers to cut these thick (2.5cm, 1”) so that you can taste the meat

and enjoy the tenderness. These are all painstakingly hand marinated and are

served with our shitake/pepper sauce. Sorry about the price folks, the Australian dollar is going crazy. If it goes down for an extended

period, we‟ll bring the prices down too. I think once you taste these though, you won‟t care what

they cost.

CHEESECAKE $5.50/slice These cheesecakes are made by our passionate fiend Cannice. If you start talking to her

about cheesecake, her eyes start to sparkle, not that they aren‟t sparkling already, and she

talks to you about cheesecake from another level. She will ONLY use the best ingredients.

This style of cheesecake is more in line with American style of baked cheesecakes; it is a bit

thicker and richer than the Asian varieties.

We offer two of her many flavors, OREO and BLUEBERRY .

Famous or not, Terry makes a damn good apple pie and we are proud to offer them.

STEVE AND KIM‟S AMERICAN CAKES Like Cannice, Steve is very particular about what comes out of their kitchens. Their cakes

and pies MUST be they way he remembers them from the States. I think these are both

wonderful.

CHOCOLATE SENSATION $4.50 Thick and rich and moist, like you would want a chocolate cake to be.

AMERICAN CARROT CAKE $4.50 These cakes have a hint of spice with all the moistness a good American Carrot Cake should

have, just like the chocolate.
