Our Dry Aged SeriesDry-aging is a process by evaporating the moisture from the meat which creates a greater concentration of flavour while the the natural enzymes break down the connec-tive tissue and making them extremely tender.
It is then cooked sous-vide style at 65°C (to seal the juices and aroma of the meat). Finally, the steak is basted with hot oil for the ‘Maillard’ reaction (caramelizing the protein), which gives the steak its distinct flavor.
