COOKING CORNER

Onion & Corn Soup1 envelope regular onion soupmix2 15oz cans spaghetti ringswith meatballs in tomato sauce1 16oz can cream-style cornGrated parmesan cheese

Prepare onion soup mix accordingto package directions. Stir inspaghetti and meatballs and corn,heat through. Serve with gratedparmesan. Makes 8 servings.

Minestrone Soup4 slices bacon, cup up1 envelope regular tomato-vegetable soup mix4 cups water1 16oz can red kidney beans,drained1 10oz package frozen mixedvegetablesGrated parmesan cheese

In 3 qt saucepan cook bacon ti l lcrisp drain and set aside. In samesaucepan blend together dry soupmix, water, beans, and mixedvegetables. Bring to boil ing.Reduce heat, cover and simmer10 to 15 minutes. Pass the cookedbacon and grated parmesan tosprinkle atop. Makes 5 – 6servings.

Zucchini­Tomato Soup½ c chopped onion½ c chopped green pepper¼ c water1 18oz can tomato juice1 med zucchini, quarteredlengthwise and sliced (2 c)1 8 oz can corn, drained¼ tsp salt2 c buttermilk

Cook onion & green pepper inwater 5 min. Add remainingingred. - simmer 30 min. Cool,Add buttermilk, cover & chil l . 8

servings.

Pea Soup & Ham2 11 1/4 oz cond. Pea soup1 c chicken broth2 c milk1 6 ¾ oz chunk ham draineddiced2 oz can mushroom

In saucepan combine pea soup &chkn broth - stir in milk.

Cook ti l l heated through – stir inham – heat through.

Hamburger Soup1 lb ground beef16 oz can tomatoes cut up2 med. Onions2 med carrots2 stalks celery, chopped1/3 cup pearl barley¼ cup catsup1 T beef bouil lon granules2 tsp season salt1 tsp. . dried basil , crushed1 bay leaf

Brown ground beef and drain offfat.

Stir in remaining ingredients and 5cups water.

Bring to boil ing

Reduce heat

Cover & simmer for 1 hr.

Season to taste with salt &pepper.

Remove bay leaf. Serves 6

Cream of Tomato Soup2/3 c. tomatoes1/8 tsp. baking soda1/2 tsp. onion, chopped1/2 T. butter1/2 T. flour1/4 tsp. saltdash pepper1/4 tsp. sugar1 c. milk

Place tomatoes and choppedonion in a saucepan and cookslowly for 10 minutes. Strain andadd baking soda. Set aside. Inanother pan, melt butter, add flour,salt, pepper and sugar. Stir unti lsmooth. Add milk slowly and cookunti l it boils well , stirringconstantly. Add tomato mixture,stir and serve at once. Makes 2servings

Hamburger SpaghettiGoulash1 (12 oz. ) pkg. spaghetti1/2 medium onion, choppedshortening1 1/2 lb. hamburger1 can cream of mushroom soup1 (15 oz. ) can tomato sauce1/2 c. chopped ripe olives1 c. shredded cheese

Cook the spaghetti according topackage directions and drain.Brown the onion lightly in smallamount of shortening. Add thehamburger and cook, coveredunti l done. Combine the soup withtomato sauce and olives and mixthoroughly. Add to hamburgermixture, then stir in the spaghetti .Place in baking dish. Cover withcheese. Bake at 350 degrees for15 minutes. Makes 8 servings.
