There’s a lot to love in Bon Mi’s little menu. The newly opened sandwich and soup shop on Pearl and Broadway is cultivating a following after a month in business.

Owner Yoon Bigot wanted to stress simplicity when she planned Bon Mi’s fare, but that doesn’t mean that creating it wasn’t a labor of love — emphasis on the “labor.” While Bigot and her husband, an architect, remodeled the former Hawthorne

Deli location, they also worked to design a menu. “We had to work for three months to make it and taste it and see what comes up,” Bigot says.

What came up is a medley of Vietnamese and French-inspired sandwiches, soups and salads, plus some breakfast on the side. Bon Mi’s bahn mi sandwiches, with five protein options and a pickled vegetable topping, are fresh and filling for just a little more than a fancy coffee. Bigot cooks the meat and makes the pho herself. Pork lovers can choose between thinly sliced grilled pork marinated in lemongrass or red chili sauce. She says the key to her tofu is flavoring it with garlic and lemongrass.

On the French side of the menu, Bon Mi features some seriously simple sandwiches. Bigot says that some dishes out there contain so many ingredients that the taste gets lost. That’s why the grilled chicken sandwich has just fresh avocado, tomato and whole-grain mustard on top. “Simple is easy and tasty, and you can taste simply chicken and mustard,” she says.

Bon Mi’s fresh ingredients come from Sunrise Asian Market, Bigot says, and she tries to buy local items. That’s why the bread is an anomaly; it comes from Safeway. “Is that good to say or not?” Bigot asks, stifling a laugh. Before the restaurant opened, she brought the sort of baguette she wanted from Portland to Eugene and asked local bakeries if they could replicate it. “They don’t know how to make it or they don’t have the same equipment or they don’t know how to make the texture,” she says. Now she has a standing order for 120 fresh-baked baguettes every morning, and they’ve sold out every day.

While Bon Mi has started out as a lunch-focused restaurant, the breakfast menu features a breakfast sandwich, berry waffles and a breakfast special. It’s neither Vietnamese or French-inspired, Bigot says, just different. She says she hopes the quick service will build a morning clientele to complement the lunch crowd.

Next on the list is ratcheting up dinner and adding specials to the menu, Bigot says. She’s thinking a bahn mi-style rice bowl will be a hit, but she says she’s glad Bon Mi started out focusing on lunch to establish a workflow. “Otherwise, we’d go crazy!”

Bigot, who moved to the U.S. from Korea when she was 19, says she’s always loved Vietnamese food. After living in Eugene, she and her husband moved to California for eight years, where they lived in a neighborhood that she estimates was “80 percent Vietnamese and only 1 percent Korean.”

That neighborhood was a culinary paradise for Bigot and her husband. “You just walk out, and there’s a lot of Vietnamese — all the Vietnamese soups, every block is a Vietnamese restaurant, and we loved it,” she says. Her goal of making fast, delicious food fits right in with her hope that she can be part of that sort of environment in downtown Eugene. “Because I love downtown, I want downtown to grow,” she says. ■Bon Mi is located at 153 E. For those who have had the pleasure of eating at local dinner phenomenon Belly, it’s incredibly diffi cult to beat, but the powers that be at the restaurant have decided to further the Belly name with a new location specifi cally for tacos. The partnering restaurant location, Belly Taqueria, is just as delicious as the original spot, though it’s less expensive, and the food is served in smaller portions. This, however, does not mean that you won’t leave with your belly brimming with Belly.

If you fi nish, say, one beer-battered, deep-fried scallop taco and still have a hankering for more (maybe lengua this time!) then the waiters and waitresses will simply take multiple orders on a need-to-eat-more basis. And we should probably sit down and discuss the chorizo dish, “El Flameado,” for a second, because, honestly, it’s a delight, and that’s all there is to it. The house-made chorizo is delectable and lip-smackingly juicy, and the whole thing is topped with fl aming cheese. Yeah — the cheese is actually on fi re when it arrives at your table.

Indoor and outdoor seating is available, and the atmosphere in both of these scenes is worth checking out. Inside, the place is decorated as gloriously and welcomingly as any Eugene hot spot should be, and it’s nice to hear, literally, that the folks staffi ng the spot aren’t afraid to let the music blare once in a while (“Thriller” never sounded better).

The prices at Belly Taqueria, as previously mentioned, are deftly lower than the original Belly restaurant, with most of the tacos on the menu ringing up at $3-$4. The new restaurant’s taco tradition originated with Taco Mondays at Belly. The highest priced item on the entire taqueria menu, as far as food goes, is the El Flameado, which comes in at $6. Not bad for a big ol’ mountain of cheese and sausage and a huge tortilla, eh? The drinks aren’t priced all that badly, either, with delicious (and therefore deadly) sangria coming in at six bucks. And I do believe they are sporting a hibiscus mojito, also; I challenge you to not enjoy washing your food down with that.

So if you’re in the mood for gourmet badassery — the kind that only the folks over at Belly are laying down — but your pocketbook is a little bit strapped, then head for Belly Taqueria; it won’t disappoint, and pretty soon you’ll have a bellyful of Mexican food-babies to take home and share the memories with. ■Belly Taqueria is located at 291 E. 5th Ave.; for info call 687-8226 or visit eatbelly.com

If you’re looking for a place to take your partner and enjoy a fine meal in a classy atmosphere, Ox & Fin restaurant in Oakway Center, a reincarnation of Osteria Sfizio, is the new hot spot that should be on your radar when date night comes around.

Stylish but with a laidback feel, Ox & Fin is an Italian seafood steakhouse that’s California chic (in a good way) with a Pacific Northwest vibe. You can escape here to toss back a few drinks with your coworkers after a hard day on the job or come in for the evening and hide out with your significant other at one of the more private tables.

First things first, the drinks and appetizers are excellent. The drink menu alone presents the wonderful problem of having too much to choose from. We suggest the Euro Sidecar, but it’s a tough decision given that seasonal mojitos are also on the docket. Think about it, a blackberry mojito made with fresh local blackberries and tons of mint … it’s pretty hard to turn down. The best move would be bringing that special partner of yours and getting both, so you can sample either cocktail — and that’s if you two are cocktail people. At Ox & Fin the flow of beer is also abundant.

“We have a tap from each local brewery,” server Will Prull says. “And lots of local Northwest wines.”It’s not just the drinks that are local. The menu boasts a virtual smorgasbord of locally grown produce

and locally farmed meat. “We’re big into supporting local culture and local farmers,” Prull says.When it comes to appetizers, don’t overlook the fried hazelnuts with alder-smoked sea salt. The

marinated olives with chili, garlic and thyme are pretty scrumptious as well. Salad lovers will be pleased to encounter the butterleaf salad with avocado, grapefruit and tarragon dressing, while seafood fans should look to enjoy the oysters on the half-shell.

If it’s beginning to sound like Ox & Fin has a brutally extensive selection of excellent food and drink to choose from, wait until you are confronted by the dinner options. The fennel sausage rigatoni soaked in tomato cream sauce is a solid bet, as is the Ox & Fin Burger. Carnivorous folks will find no shortage of love on the main course menu; rib-eye steak (with option of adding a fried egg), hanger steak in béarnaise sauce and a short ribs plate await those with that tangy taste for meaty delights.

Partnership is something that should be celebrated with good food, strong drink and, of course, dessert. The seasonal house desserts at Ox & Fin are enough to destroy anyone’s workout diet or abstinence from sugar. Our top pick is the lemon curd tartlet with raspberry coulis. There comes that moment at the close of a great meal where you sit back, breathe deep and, just as the food begins to settle, you want a bit of sweet. In a world chock-full of “I shouldn’ts,” the smallest of bites will do. And the better the quality, the more thorough the satisfaction. Enter Davey Wendt and his chocolates, available (for now) exclusively at Rye.

Self-proclaimed cheapskate Wendt has priced each at just $2 — the perfect size for one or, as rumor tells this writer, to share. And there is something for every taste. The menu includes an unchanging six varieties — the haystack, peanut cluster, butter toffee, caramel, peanut butter cup and an almond butter cup — as well as a candy bar du jour.

The price is right. The size is great. But what makes these chocolates is the quality of the craftsmanship. Wendt’s obvious enjoyment of his trade — evident in the smile that didn’t leave his face once while we talked chocolate — shows through with each bite. He takes the time to blend each ingredient, flavor and spice with such precision that you find yourself delighting in the hint of chipotle salt that tops the peanut butter cup or the way the alder-smoked salt brings about the bitterness of chocolate perfectly in the haystack.

Currently Wendt is applying his talents to the recreation of the old standards of candy bars, like the Butterfinger, Milky Way or Snickers. The idea is bringing the nostalgia of the favorites, recreated with quality ingredients.

And those top-notch ingredients are where this whole process begins. Organic chocolate, sugar, honey, dried fruits and so on come from local suppliers at Hummingbird and the smoked salts come from Fisherman’s Market. Wendt assembles his masterpieces in the front corner of the kitchen at Rye, where he also bakes the bread and makes the other desserts. Chocolates are made in small batches so he can keep the quality high.

Unsure of how things would go, Wendt came into the partnership with Rye prepared for chocolate sales to take a slow and steady rise to popularity. Within weeks, not months, chocolate sales have been almost even with beer sales, dollar for dollar. Considering that beer sells at about twice the price of one of Wendt’s chocolates, to say he is crushing it may be an understatement.

For now, you can purchase chocolates one at a time for $2 or by the sample box (one of each standard, plus the current chocolate special) for $14. Soon, Wendt would like to make boxes of the

“standards” available, prepackaged for $10 — that’s like getting one free!

If you have a sweet tooth, a love of fine chocolate or a curiosity for what your beloved Snickers bar might

taste like in quality, small-batch form, swing by Rye for a box of Wendt’s chocolates. And while you’re

there, you may as well stick around for one of Rye’s now-famous cocktails or a sampling of the

delectable seasonal menu. ■

If you’re looking for a coffee shop that’s intricately woven into the local community, check out Perk Coffee and Espresso on Willamette Street. “Everything that we have in our shop that I can control is all local, usually from the smallest businesses I can fi nd,” says owner Aaron Chester, who started the shop just over a year ago.

After working at different coffee shops around Eugene, including managing Sweet Life Patisserie, Chester was ready to start his own. “I like the community that we build,” he says. And that community includes the network of small businesses he works with that take advantage of these nearby resources and use them to their potential, he says. “It’s a lot of work,” Chester says, “but I think that we have an availability of food and ingredients used that is amazing in this area of the country.”

And they work with some really great people, Chester says, like local wood-roasted coffee proprietor Eric Pierce at Caffé Pacori. “Eric’s out there splitting wood, doing

everything in the mornings,” Chester says. “It’s kind of neat that there’s someone here in town who does that.”

Perk’s other local partners include Knead Freaks Bakery, Chains and Grains (makers of pretzels and bread), Humble Bagel, LMF Tea Traders and Blue Lotus Chai. Chester’s standing order with Karen Nunley at Holy Donuts is “whatever she feels like making,” and he’s rewarded with specialty peach-raspberry and berry-plum pies.

Chester and crew make Perk’s own chocolate with a nondairy base, and they make most of the syrups, like lavender, rosemary, caramelized sugar and butter-based caramel. Rosemary syrup in an iced coffee adds a savory twist, and the coconut milk iced coffee is light and refreshing. But Chester has another suggestion: “When I go in and order a drink, I just say, ‘Make me what you want to make me today.’” He says his baristas are all top-notch right now, and they’ll know what’s pulling best that day.

Chester focuses on house-made and local sourcing because he knows the struggles smaller businesses face.

“They are forced to try harder,” he says. “The bigger names can automatically can get away with whatever they want, but the little person has to show up and really put the effort in and go that that extra step.” It’s the extra step from these small businesses that is meaningful to him: “It shows in the quality and consistency and the attention to detail,” he says.

Chester names Zachariah Swan from Eugene Handbuilt, a local baked goods seller, as an example. He will bring in a sample of something new he’s found, a product that might be of better quality, Chester says, so everyone can taste and decide whether it’s worth the expense. “He really goes the extra mile, and it’s great to see.”

And not only are Perk’s products thanks to local collaboration, the furniture in the quirky little shop is too. “Everything made in here was made with recycled materials,” Chester says. “We don’t buy new equipment.” Much of interior was built using materials from BRING recycling. ■Perk is located at 1351 Willamette St., 636-3255.

For a year, I smelled Party Cart before I tasted any of its menu. Driving home on 28th Avenue, I would roll my window down and stick my nose in the air like a hungry beagle, catching breezes of braised pork mingling with sweet puffs of peppermint ice cream coming from the Red Wagon Creamery cart

that shares the Healthy Pet parking lot. The cart always had a steady if small stream of patrons, but for some reason, perhaps due to its less-than-scenic location next to a power grid, I did not patronize the cart until a friend persuaded me to meet her there a year after it opened.

After ordering at the counter of the retrofitted camper, I sat down at one of the three rickety tables, eyeing my fellow diners’ dishes: hearty sandwiches, colorful salads, artfully deviled eggs. Then my dish was delivered: a plump, steaming helping of artichoke bread pudding. I couldn’t hold each buttery green bite in my mouth long enough.

Party Cart owners (and wife and husband) Tiffany Norton and Mark Kosmicki were tired of working for others and weary of the Eugene scene after years working in the local food industry. “We wanted to go into business for ourselves,” Kosmicki says. They agreed on a food cart.

“It’s the lowest overhead,” Norton says. “The easiest.”“Not the easiest,” says Kosmicki, exchanging a

glance with Norton. They both laugh.“OK. The easiest if you’re poor,” Norton says.The partners originally wanted to start their culinary

venture in the food cart mecca of Portland. Then they began driving around Eugene in search of potential good locales and found that the best spot for them was a few blocks from their home, the Healthy Pet parking lot at the crossroads of 28th Avenue and Friendly Street. “We approached Healthy Pet and planted a seed in their ear,” Norton says.

Meanwhile, they were converting what had been the camper’s “shell of a kitchen” into a legitimate cooking operation, installing a refrigerator, a sandwich prep

station, professional baking equipment and a six-burner stove and oven. Peering into the cart’s snug interior, there is not one surface that goes unused, whether it’s for hanging pans or cooling loaves of bread. They hired a friend and local artist Athena Wisotsky to paint the exterior: some dapper foxes hovering around a plate of steak and eggs. After showing the owners of Healthy Pet a menu and their camper, Party Cart opened its window to business in April 2011.

“The only parameters were it had to be local and food we want to eat,” Kosmicki says of the menu. Norton researched local farms, growers and food producers and now they have a list of food vendors that takes 10 minutes to recite, from Laughing Stock Farm (pork, chicken and duck eggs) to the Corner Market (vegetables).

Each week they change their menu according to what’s in season and available, whether that’s pork shoulder or dollar-a-pound zucchini, and although regular diners can probably detect common threads in the cart’s menu — wheat berry, biscuits, braised meats — there are rarely any repeat dishes. When pressed to name one signature flavor, Norton and Kosmicki agree on a bacon and kimchi combo, inspired by a dinner at New York City’s Momofuku. The only other constant of the menu is the pricing.

“We try not to have anything over $10,” Norton says. “Affordable, local organic,” says Kosmicki, nodding.

“Clean food shouldn’t be for rich people.”Party Carty, to their surprise, reignited their love for

Eugene. Their vendors and customers were becoming their friends, and one pair of regulars, Emily and Stuart Phillips of Red Wagon Creamery, became business neighbors, setting up their apple-red cart in the same lot. Norton and Kosmicki decided that coffee would be complementary to the sweet and savory business pod and, through mutual friends, contacted the owners of the French press specialty cart Clementines, Beverly Edge and Holly Chedester. They joined the lot in June.

Although Norton and Kosmicki love the cart life, the lack of space can be frustrating and limiting. “I run into Tiffany so much,” Kosmicki says, “at least 15 times a day.” Looking into the future, they hope to turn their restaurant on wheels into a “brick and mortar” establishment.

On a recent sunny Sunday morning, I returned to try Party Cart’s brunch offering with a friend and found myself ordering more than half the menu: zucchini pancakes with huckleberry butter syrup; biscuits with tomato gravy pork loin, tasso and duck egg; fried polenta with bay shrimp, octopus, kimchi, bacon and cherry tomatoes; potato wedges fried in lard. Naturally, everything was eaten. There may be nothing more satisfying than a full belly and looking down at an empty plate with the streaked huckleberry purples, duck-egg oranges and tomato reds of the local land. ■

Thomas Pettus-Czar and Dustin Kinsey have spent much of their time as friends traveling the world together. Now they are introducing a cozy café/bar to downtown Eugene where the community can relax and network — or summon the muse.

The Barn Light will catch light in early September from 7 am to midnight Sunday through Wednesday and until 2 am Thursday to Saturday on the ground floor of the Broadway Commerce Center at Willamette and Broadway.

“One of the great things about Eugene and why we wanted to open up shop is just the community that’s here — the small, independent businesses are really great in this town and work well together,” Kinsey says.

The café/bar will serve coffee, pastries and scones in the morning, picnic-style lunches and dinners with cocktails, beer and wine throughout the night.

Their good friend from home (Lawrence, Kan.), Tina Stamos, is helping to design the menu as well as provide foods that are simple and pleasing much like the space itself. “Some of the items I am most excited about are the meatloaf sandwich and the coffee bacon BLT,” Kinsey says.

The Barn Light will serve Water Avenue Coffee from Portland. “They’re a small, independent business like us, and their product is out of this world,” Pettus-Czar says, “not to mention the founder of Water Avenue is from Eugene and liked the idea of having a presence downtown.”

“The Barn Light just came to me,” Pettus-Czar recalls. Having lived in Oregon for several years, Pettus-Czar was always fascinated by the rustic barns he would encounter driving through Oregon country. Having dreamt up the name long before the seeing the space, the pair discovered what seemed to be barn lights hanging on the exterior of the Commerce Center — it was truly meant to be.

Through their travels between Europe and South America, Pettus-Czar and Kinsey were practically defining their eventual business plan and philosophy. Having worked together at a café called The Bourgeois Pig in Lawrence, they wanted to found a place of their own; that reflected their pasts as well as their travels abroad.

According to Pettus-Czar, there is something special about the European ambiance that communities need. European cafés and bistros always provide an open invitation; one can come and go as they please. Most people can come by themselves and find other individuals to share and collaborate with. He thinks that if one is successful in creating a place where like-minded individuals can come together, it enriches the community with a subsequent opportunity for creative growth.

The Commerce Center seemed to fit the industrialist, bringing-back-the-old feel that the two desired. A maze of pipes hangs overhead where the white barn lights will hang, and behind the bar the building’s bricks are exposed, adding a subtle rustic touch. The two have also brought in century-old pieces of a McMinnville barn to use as wall paneling around the space.

Whether you are looking to indulge on a craft cocktail or just need an ice-cold PBR, The Barn Light is a place with a wide spectrum of spirits. Along with many other cocktails, The Barn Light will introduce its own variation of a Kansas tradition called “Horse Feather”; a delicious concoction of rye whiskey and ginger beer.

The Barn Light is running a Kickstarter Campaign for the next couple weeks until its official opening in September. Their goal is $15,000 and pledges will receive special gifts ranging from T-shirts to free coffee for life.

“Regardless if we reach our goal, Kickstarter has been a success in getting the word out while interacting with the community,” Pettus-Czar says. ■

Some of us get overzealous in the spring, plopping handfuls of seed in the ground only to find ourselves with an overabundance of produce in the summer and fall.

A great option for backyard growers and hobby farmers, as well as crafters and other food producers, is selling at the Spencer Creek Grange’s Growers Market. Spearheaded by Genie Harden, the market, now in its third season, features an array of seasonal veggies, locally

grown berries, meat from pasture-raised animals, honey and farm-fresh eggs. Located just off the Lorane Highway, Spencer Creek’s inviting atmosphere

— pleasant music, friendly vendors, room for the little ones to run around — is a wonderful place to spend an afternoon. And the sense of community spirit is palpable.

“We are comprised of farmers, artists, musicians and chefs … all looking to have fun doing what we love,” says vendor Heidi Branchesi of Chezem Creek Gardens. “As a vendor who sells vegetable plant starts, houseplants, perennials, and seasonal produce, I have met many of my neighbors and have strengthened my communication with them.”

Three years ago Harden approached Branchesi about becoming a vendor at the market. “As a landscaper and part-time farmer with a farm stand at the end of my driveway, I jumped at the opportunity to be a part of the neighborhood market,” Branchesi says. “Many other neighbors showed interest and here we are in year three of a successful neighborhood market!”

Harden started the market with a mission to provide a venue for neighbors to sell their locally produced agricultural items. The market emphasizes sustainable and healthy growing practices while encouraging and supporting local food production efforts through the fellowship of community.

Recently, Harden moved out of her managerial role at the market and into the Grange’s kitchen. For a hearty and healthy lunch, stop by Café Le Grange, located on the lower level of the grange hall. Harden and Margot Hale, the “mastermind behind the falafels,” spent one year experimenting and developing recipes that used as many local products as possible. The result is a small but tasty lunch menu offered on Saturdays that includes falafel wraps, dolmas, muffins, soup and a market salad featuring house-made dressing.

The fantastic falafels and dolmas (concocted by Hale) are a popular item at the café. “We are really sticklers for detail,” Harden says. “I developed the flatbreads, which are made from wheat grown locally at Hunton’s Farm and milled at Camas Country Mill. I cultivated the natural yeast growing on the wheat to make a locally grown sourdough, so it is in fact a leavened flat bread.”

Harden and her family joined Spencer Creek Grange six years ago, looking for a place to socialize with other families. “It has been a great place for me to grow as a human being, and I think I have learned to be more open and respectful than I used to be,” Harden says.

Boulevard Grill’s front-of-the-house

manager Hannah Morton shared this recipe

for stuffed chicken breasts, which she says

are one of their most popular items. ‘Airline’

chicken breast refers to a boneless chicken

breast with the drumette still attached. The

cut is also known as a ‘frenched breast,’

and you can cut the breast this way yourself

or ask a butcher to do it for you. Boulevard

Grill’s Chef Lino specializes in seafood and

steaks and creates imaginative dishes using

fresh ingredients. The restaurant is casual

and relaxed, yet it provides a delicious fine

dining experience in a location that is close

to campus.

4 airline chicken breasts

1/4 lb thinly sliced prosciutto

6 oz of brie cheese

2 Fuji apples, cut into small cubes

4 leaves basil

1 cup flour

salt and pepper to taste

1/4 cup olive oil

2 tbsp butter

4 leaves sage

1/2 cup dry white wine

Using a sharp knife, cut a deep horizontal

slit into each chicken breast to butterfly

it. Open each breast so that the chicken

lies flat, then cover with plastic wrap and

pound with a meat mallet until chicken is

1/2-inch thick.

Arrange prosciutto in four piles on a

clean surface. Place a slice of cheese and

apples in the center of each pile and bring

the ends of the prosciutto up around the

cheese to create a packet.

Lay a prosciutto packet on half of a

flattened chicken breast and top with

a basil leaf. Fold the other half of the

breast over the prosciutto and basil and

press down firmly. Repeat with remaining

prosciutto packets, chicken and basil.

Transfer flour to a wide, shallow dish and

set aside. Season chicken all over with

salt and pepper, then dredge each piece

in flour, shaking off any excess. Set aside.

Heat oil and butter together in a large

skillet over medium high heat. Add sage

leaves and cook until crisp. Using a

slotted spoon, transfer sage to a paper

towel-lined plate and set aside.

Add chicken to skillet, skin side down,

and cook until cooked through and golden

brown, about 5 minutes per side. Check

for doneness by piercing the thickest part

with the tip of a paring knife. If juices are

still pink, lower heat and continue to cook

another few minutes. Transfer to a warm

plate and tent with foil.

Deglaze the pan by pouring the wine

into it while the pan is still hot. Scrape

up the cooked bits and warm until the

wine sauce is heated through. Pour over

cooked chicken breasts and garnish with

fried sage leaves.

Red Agave head chef Mike Meyer shared

this recipe, which takes advantage of

late summer’s best product. Tomatoes

and melons will be locally available

through October, he says. “Melons are

just starting to come into season now,

and since we put the salad on the menu

we’ve gotten a lot of positive comments,”

he says. “It’s a really pretty salad, very

colorful.” Heirloom tomatoes range

from orange to deep purple in color, and

their favorite melon, Yellow Doll from

Groundworks Organics, is bright yellow

and very sweet. Menus at Red Agave are

seasonal, and Meyer says his favorite

part of the week is going to the Tuesday

farmers market to see what’s available.

‘Batons’ are sticks, like a large julienne.

The glucose in the recipe gives the

dressing a viscous quality which plain

sugar won’t impart. If glucose isn’t

available, Meyer suggests using honey

or agave syrup instead, or even sucrose,

which is sometimes available in bulk.

For salad:

3 to 4 multi-colored heirloom tomatoes,

sliced

1 to 2 personal seedless watermelons

(multiple varieties if possible), peeled

and cut into 3/4-inch by 3-inch batons,

reserve scraps for dressing

1/2 jalapeno, seeded and minced

1/4 cup cilantro, minced

3 to 4 oz goat cheese

salt and fresh-ground pepper

For dressing:

1 jalapeno, sliced into thin rounds

1/2 shallot, julienned

1/4 carrot, sliced into very thin rounds

1/2 plum tomato, seeded and diced

1 clove garlic, sliced thin

1 cup watermelon

2 tbsp oil

1/4 cup glucose

1/2 tbsp grenadine

salt to taste

Heat oil over medium flame. Sweat

the first five ingredients until soft. Add

watermelon and sauté another 3 to

4 minutes. Transfer to a blender. Add

glucose and grenadine while buzzing.

Adjust with salt. Transfer to a bowl and

let cool.

For plating:

Arrange three slices of tomatoes on four

plates overlapping, sprinkle with salt

and pepper, toss watermelon batons

in a healthy amount of dressing and

stack in a pyramid-like shape. Sprinkle

minced jalapeno and cilantro over plates.

Crumble goat cheese evenly.

‘Daube’ is a term that means stew, and

this dish is the essence of what Rye has to

offer: fresh, local, seasonal ingredients that

are comforting yet elegant. The vegetables

and starch can vary according to your taste

and what is available. This stew is served

on rounds of polenta or mashed or roasted

potatoes. One of Rye’s three owners, Jeff

Passerotti, explains that the concept for Rye,

which is owned and operated by people with

decades of experience in restaurants, was

to be “affordable, locally driven and food-

and drink-centric.” The inspiration was a

restaurant that Passerotti visited in France

on a trip 2 years ago. “It was a gathering

place for the village . . . warm, cozy,

comfortable, inviting, friendly,” he says. The

three owners talked about wanting to open

a place of their own, but “threw in the towel”

because they couldn’t find the right place.

Then Rye’s current location opened up.

Since then, it has proven to be an excellent

combination of fine dining, good value and

friendly service. “The world is a village,”

Passerotti says. “We want to be inclusive for

the village of Eugene.”

2 cups onion, medium dice

1/2 cup carrots, medium dice

1/2 cup celery, medium dice

1 cup cut fresh green beans

1 cup sliced zucchini

4 cups quartered new potatoes

1/4 cup herbs de Provence

2 cups white wine

1 1/2 qts stock or water

1/4 cup olive oil

2 tbsp salt

1 tbsp pepper

5 lbs lamb stew meat

olives for garnish (optional)

Set oven to 400 degrees. Join together

the onion, carrots and celery and set

aside. Over a medium high flame heat up

a Dutch oven. Add the oil to warm, then

the lamb, stirring to brown all sides. (If

you don’t have a Dutch oven, use an oven-

proof dish and sear the lamb in a skillet

first.)

Deglaze the pan with the wine. Add the

herbs de Provence, then the celery,

onions and carrots. Then add the stock or

water. Cover and place in the oven for 45

minutes.

After 45 minutes, remove the Dutch

oven and add the potatoes and other

vegetables, along with salt and pepper.

Cover and return to oven for another 30 to

40 minutes. The potatoes should be just

soft enough to be pierced but not falling

apart.

Serve in a bowl atop your choice of starch,

and garnish with olives if desired.

Chef and owner Mark Stern started out

with Carte Blanche in 1998, which is a

popular cart serving 8 to 10 soups each

day. He turned that into Carte Blanche

Catering, and then in May of 2011, he

opened Soup Nation at 5th and High.

There he pulls from 80 different kinds of

soups and serves them alongside fresh,

generous salads and sandwiches. Carte

Blanche Catering is “way beyond soup,”

Stern says, but soup is what Soup Nation

does best, and they do everything from

hot to chilled, savory to sweet. “Soup is a

good vehicle to do international cuisine,”

Stern says. “Soup lends itself to so many

different cultures.”

Stern and staff make their own baked

goods and focus on seasonal availability.

“We make everything from scratch,” he

says. “Nothing is ‘add water and stir.’

We buy everything locally as much as

we can, local coffee … everything’s as

locally sourced as we can be.” Soup

Yields 4 quarts

4 cup pork butt, cooked and diced

2 cups quinoa, cooked

2 cups yams, diced and roasted

1 cups onions, small dice

1 cups carrots, small dice

2 tbsp garlic, minced

2 tsp coriander, toasted and ground

1 tsp turmeric

1/3 cup olive oil

salt and white pepper

3 qt homemade stock (vegetable, chicken

or pork)

2 tbsp lime juice

cilantro for garnish

Cook 3 pounds of pork butt in oven, at

least 4 hours at 350 degrees until tender.

You will have leftovers. Dice 4 cups for the

soup.

Cook quinoa.

Roast yams in oven at 375 degrees for 25

minutes or until done.

In stock pot, sauté onion and carrots in

olive oil with 1 tablespoon of salt until

translucent. Add garlic, coriander and

turmeric. Cook 5 minutes on medium

heat. Add stock. Bring to a simmer. Add

cooked quinoa, roasted yams, diced pork.

Adjust salt and white pepper to taste.

Add lime juice and garnish with cilantro.
