Jerk Pork Tenderloin with Spiced Red Potatoes & Grilled Pineapple

Prep: 35 minutes plus marinating

Roast/Grill: 50 minutes • Serves: 24

91/2 pounds Butcher’s Block pork

tenderloin

31/2 cups Caribbean jerk marinade

3 large ripe pineapples, peeled, cut crosswise into 1-inch-thick slices

and cored

1 cup olive oil 21/2 tablespoons kosher salt

1 tablespoon plus 3/4 teaspoon coarsely

ground black pepper

1 tablespoon plus 3/4 teaspoon

dried thyme

1 teaspoon cayenne pepper

1 teaspoon ground cumin

9 pounds unpeeled red potatoes,

cut into 11/2-inch chunks

3 large red onions, cut into

11/2-inch pieces

15 garlic cloves, chopped

1 tablespoon plus 3/4 teaspoon

ground allspice

1 tablespoon plus 3/4 teaspoon

ground cinnamon

1. Marinate pork wi th jerk marinade in

refrigerator 2 to 6 hours. 2. Brush both sides

of pineapple sl ices with 6 tablespoons oi l .

3. Preheat oven to 350 °. In smal l bowl ,

combine sal t , black pepper , thyme, cayenne

and cum in . I n l a rge bow l , t oss po ta toes ,

onions and 3 tablespoons spice mixture with

remaining oil. Transfer potato mixture to sheet

trays and roast 50 minutes to 1 hour or unti l

pota toes are tender , s t i r r ing once ha l fway

through cooking. 4. Stir garl ic, al lspice and

c i nnam on i n to rem a in i ng sp i ce m i x tu re i n

bowl. Remove pork f rom marinade; discard

marinade. Rub pork wi th spice mixture. Gri l l

pork over medium heat 15 minutes or unt i l

i n terna l temperature reaches 145 °, turn ing

pork occas ional l y . T ransfer pork to cut t ing

board; let stand 10 minutes. 5. Gril l pineapple

over medium heat 10 minutes, turning once

halfway through cooking. 6. Thinly sl ice pork

and serve wi th potatoes and pineapple.

12 garlic cloves 1 small yellow onion, diced

1 cup plus 2 tablespoons soy sauce

3/4 cup olive oil

3/4 cup pineapple juice

1/2 cup plus 1 tablespoon light brown sugar 2 tablespoons peeled and finely chopped

fresh ginger

11/2 teaspoons ground black pepper

91/2 pounds beef flank or culotte steaks

1. In blender, purée al l ingredients, except

steaks. Marinate steaks with marinade in

refrigerator 4 to 12 hours. 2. Remove steaks

from marinade; reserve marinade. Grill steaks

over medium heat 10 to 12 minutes or

unti l internal temperature reaches 135° for

medium-rare, turning once halfway through

cook ing and bas t i ng occas iona l l y w i t h

reserved marinade. Transfer steaks to cutting

board; let stand 5 minutes. Thinly slice steaks

diagonally across the grain to serve. Discard

any remaining marinade.

6 avocados, halved, pitted and cut into

1/2-inch pieces

3 yellow or red bell peppers, diced

11/2 large red onions, diced

3/4 cup chopped fresh cilantro leaves

In large bowl , whisk together o i l , l ime ju ice,

zest, mustard, cumin, salt and black pepper.

Gently fold in remaining ingredients unti l well

blended. Refrigerate 2 to 6 hours to marinate.

Prep Time: 20 minutes Total Time: 20 minutes

BEEF BRISKET WRAPS

DIRECTIONS

Warm torti l las on a gri l l or in the microwave.

Line each torti l la with two pieces of cheese,

spread 1 tab lespoon of mayonnaise over

cheese, spr inkle wi th 2 cups of beef br isket,

1/3 cup of lettuce, and pour 1 tablespoon of

barbeque sauce over the lettuce. Fold in both

sides of the wrap. Holding in the folded sides,

ro l l up the w rap t i gh t l y f rom the bo t tom to

the top, keeping ingredients f irmly packed as you go. Slice each wrap half diagonally and serve.

Ingredients:24 ounces Ridged Elbows3 cups creamy Italian Dressing3 cups peeled and diced cucumber3 cups diced tomatoes3 cans (18 ounces) tuna, drained and flaked 3/4 cup sliced green onions

Alaska Sur imi Seafood Let tuce Cups Refreshing and tangy, these California Roll-inspired

lettuce cups make an impressive appetizer.

Prep T ime: 30 m in S e rves : 4

Ingredients

12 oz. Portico Bounty flake style Surimi

1 1/2 cups cooked rice (preferably short grain Japanese rice)

1/2 cup cucumber, peeled, seeded and chopped

1/2 cup avocado, peeled and chopped

1 cup Asian-style salad dressing, bottled (preferably with ginger and wasabi), or for a lighter

version use a low-fat dressing

1/4 cup pickled ginger, chopped, optional garnish

1/2 cup toasted nori (seaweed), optional garnish

3 Tablespoons toasted sesame seeds, garnish

1 head iceberg lettuce

Directions

Lettuce cups: Cut off the bottom third of the lettuce head.

Soak lettuce top in ice water for 10 minutes – this will help

separate the leaves. Separate the outer lettuce leaves,

one at a time, to make the cups. Using scissors, trim each

lettuce cup to form circles. A head of iceberg should yield

8 to 10 lettuce cups. Save the lettuce core for a chopped

lettuce salad.

Salad: Combine Alaska Surimi Seafood, cooked rice,

cucumber and avocado in a large bowl. Add dressing;

toss to coat. Place lettuce cups on a large plate and fill

each with 1/2 cup of the Surimi-rice filling.

Garnish wi th nori (opt ional ) to serve.

Apple Raisin Rum Sauce

1 cup Apple Whole Fruit Filling 1/4

cup Rum

1/2 cup Raisins 1/2 cup Maple Syrup

Combine all of the ingredients in a

saucepan. Mix and bring to a slow boil.

Fill one pie shell with the Blueberry Whole

Fruit Fi l l ing. Place the second (thawed if

frozen) pie shell on top. Cut two sl i ts into

the top crust. Pinch to seal and f lute the

crust along the edge. Bake at 425 °F for

40 minutes, or until crust is golden brown.
