Crust:2 cups graham
crackers crumbs 3 tablespoons
dark brown sugar 1 teaspoon
ground cinnamon1/2 teaspoon
ground nutmeg 1/16 teaspoon
salt6 tablespoons
unsalted butter, melted
Filling:4 egg yolks,
room temperature Finely grated
rind of 1 lime 1 (14-ounce)
can sweetened con-densed milk
1 cup freshlysqueezed lime juice
Whipped cream(optional)
1. Combinecrumbs, brown sugar,cinnamon, salt and nut-meg in a bowl. Stir inmelted butter. Pressmixture into a 9-inchglass pie plate. (Crust
will be thick.) Refrigerate15 minutes.
2. Preheat ovento 350F.
3. Combine eggyolks and lime rind in amixing bowl. Beat with amixer on high speed 8minutes. (The eggsshould be pale yellowand fluffy.) Graduallyadd condensed milk andbeat 7 minutes, or untilfluffy. Reduce speed tolow and slowly add limejuice, beating about 2minutes. Pour filling intochilled pie shell.
4. Bake about12 minutes, until filling is
set. Transfer to a wirerack and let cool com-pletely. Refrig-erate 3 hoursbefore serv-ing. Top withwhippedcream, ifusing, beforeserving.Serves 8.

They knew itwould take a special sortof pup, so they beganbrowsing on Petfinderand even went to homevisits, but not one ofthem seemed as if he orshe would fit in. Andthat’s important forpeace and harmony inthe house.
For the Sinkers,who live in Georgetown,Ont., the ah-ha momentcame when they spotteda calm and docileschnauzer/terrier mixdescribed on Petfinderby the Monroe CountyDog Pound in Cleve-land, OH. His ears had
been surgically alteredso they are half thewidth of what theyshould have been,meaning he looked a lit-tle strange, but thatdidn’t dissuade them.
“He was 10months old when wemet him,” says LindaSinker.
“He let us pickhim up and cradle himand basically do any-thing to him without afuss.“ He’d obviouslybeen neglected becausehe didn’t know how toplay. Within weeks, hewalked on a leash,played with tennis ballsand fetched.
“It took awhilefor our cat to accepthim,” Sinker says, ‘butnow they are best
friends.”He’s a fastidious
boy who won’t potty inhis own back yard,which keeps the prem-ises nice and tidy, butmeans taking him onwalks three or four timesa day. Good for his andhis family’s health, butnot so much fun whenthere’s a polar vortex.
Still it’s little toendure for such a de-voted pet. “He is ex-tremely lovable and willsit by your side forhours, especially whenyou’re sick. It’s as if heis looking after you in hisown way,” Sinker says.
The little doghas become a very spe-cial family member.
