She got in touchwith Teacher’s Pet Res-cue in Coudersport, PA,to meet the dog. Hispicture portrayed him
better than he looked. “The rescue had
just gotten him in andwas trying hard to gethis weight back up,” shesays, “but he had diar-rhea and their effortsweren’t helping much.”He was a bag of bones.
In spite of hisproblems, Page had al-ready fallen for him, sothey adopted him. “Weobviously had to changehis name, so we thoughtof the man in black,Johnny Cash, andnamed him Cash.”
The first order ofbusiness was a visit tothe vet, who pronouncedhim in good health ex-cept his weight. Theyput him on a high pro-tein, no-grain diet andhis weight has re-bounded.
A big dog like
Cash needs rules, andPage says for the mostpart he listens well andis learning more all thetime, but there are still afew rules they need towork on.
The addition ofa Jack Russell terrier tothe family has givenCash an energetic play-mate that keep life verylively at the Page’s.
This big, for-merly neglected dogseems to understandhow lucky he is, andPage feels she andWilliam are in goodpaws as well.

supermarket.
Winter Minestrone
1 tablespoonextra-virgin olive oil
4 greenonions, chopped
1/2 red orwhite onion,chopped
1 celery stalk,chopped
3 large car-rots, chopped
4 ouncesfinely choppedshaved deli ham
3 cups water 3 cups re-
duced-sodiumchicken broth
1 cup wheatberries, rinsed
1 ParmigianoReggiano cheeserind
2 bay leaves1/2 teaspoon
salt Freshly
ground black pepper1 (14-ounce)
can diced tomatoeswith basil
1 (1-pound)bag kale, chopped
4 toasted pitabreads
1. Heat oil ina large saucepan orDutch oven. Addonions, celery, car-rots and ham. Sauté10 minutes.
Add waterand next 6 ingredi-ents (water throughpepper).
Bring to aboil; reduce heatand simmer, cov-ered, until wheatberries are tender,about 30 minutes.
Stir in toma-toes and kale; cookuntil thoroughlyheated. Remove
rind before serving. The longer
the soup sits withthe cheese rind, themore intense the fla-vor.
Serve withtoasted pita bread.
Serves 8.

grated lemon rindButtery Citrus Icing:
1/4 C (1/2 stick)butter, room temperature
2 tsp finely gratedorange rind
1 Tbl plus 1 tspfinely grated lemon rind
2 C sifted pow-dered sugar
1 Tblfresh orangejuice

fresh lemon juice
1. Preheat oven to 325F.Coat a 10-inch tube panor 12-cup Bundt pan withcooking spray. Combine 1Tbl granulated sugar and1 Tbl flour. Sprinkle overoiled pan, tapping out ex-cess.2. Beat butter with a mixeron high until light andfluffy. Gradually add 1 3/4C granulated sugar. Con-tinue beating until wellcombined. Beat in eggs,one at a time.Sift 3 C flour, baking sodaand salt into a mediumbowl.3. Combine buttermilk, or-ange juice and lemonjuice. Add flour mixtureand buttermilk mixture al-ternately to butter mixture,beginning and ending withflour mixture; beat at lowspeed. Stir in the rinds.Pour batter into preparedpan.4. Bake 60 to 70 minutes,until top is golden brownand a wooden pick in-serted in the centercomes out clean.5. To prepare icing, com-bine butter and powderedsugar using a mixer onmedium. Add rinds andjuices, 1 Tbl at a time.6. Let cake cook in pan ona wire rack 10 minutes.Turn onto a serving plate.Pour one-third of icingover cake while still warm.Let cool completely andspread with remainingicing. Serves 16.
