The noodle history of China
Noodles were invented by 1900 year ago in the Eastern Han Dynasty, called “Shu Sou Bng”「水溲餅」、” Zh Bng”「煮餅」
In the different dynasty, noodles' cooking method were developed to diversification and evolved to different types
The type of noodles
Five of noodles are representing for China
-“Wuhan hot dry noodles”「武漢熱干麵」 -“Beijing black bean sauce noodles”「北京炸醬麵」 -“Shanxi sliced noodles”「山西刀削麵」 -“Sichuan dan dan noodles”「四川擔擔麵」 -“Henan stewed noodles”「河南燴麵」

Have different method to make and eat

• Staple food, stress on amount not quality
• Make from wheat and alkali
• Noodle are thick and soft
• Eat with Garlic and Allium fistulosum

• Noodle are thin and firm to the bite
• Put it in the smaller bowl which are delicate

Edible method : don’t drink soup before eat noodles, use chopsticks to clasp noodles and put it in the spoon to eat, don’t make noise when eat noodles
Japan
Noodles were translated to Japan in Tang dynasty. Many of student and monk take the skill and knowledge to Japan when they stay at China studying.

Ramen ( ラーメン )
Zhu Zhiyu(朱之瑜 ) sailed to Japan and make this noodles to entertain the daimyo( 大名 ) —Tokugawa Mitsukuni( 徳川 光圀 ) in 1659.
The history of ramen is not too long, it start to popular after the second world war.
It become a popular food amount Japan.
Soup is the most important thing in ramen. In different region, there are different type of soup. However, even there are many different type of soup, it still call ramen but not other name.
The start of eating a ramen is to taste the soup, then put all the food into the soup and taste again to feel the different of the soup, finally you can start to eat noodles.
Ramen usually be a set of meal with rice and Jiaozi.
Japanese monk Kūkai ( 空海 ) went to china in Tang Dynasty and took the “Udon” back to Japan.
Udon Start to popular in Edo period( 江戸時代 ).
Udon begin popular in Kansai( 関西 ) and more popular in Kansai region now. Initially, udon is similar to wonton in China, then Japanese take out the filling inside wonton and it become a type of noodles.

Soba( 蕎麦 / そば ) The Japanese learn the
technique of making noodles then use Buckwheat to make in 1659.
Soba begin popular also in Edo period( 江戸時代 ).
Soba firstly popular in Edo( 江戸 ) and soba is more popular in Kantō ( 関東 ) region now. In new year, Japanese will eat soba to pray for
healthy and fortune in the next year.
Japanese also give soba to their new neighborhood as a present.
It usually eat at cold but still can eat at hot.
Instant ramen( インスタントラーメン )
It is invented by Ando Momofuku( 安藤百福 ) in 1958. When he saw people need to wait a ramen for a long time, he want to invent a type of ramen that can be cook fast to save people time.
Instant ramen popular in Japan very soon and it start popular amount Asia in a short time. Nowadays, it become a culture of fast food.
We can find different type of Instant ramen all over the world now.
Why Japanese eating soba and ramen have sound?
Japan was deeply influented by China, Japanese believe that it should be quiet when eating to show his polite.
However, when soba go into edo, it is a food for common people. They think that eat quietly is hypocritical and they do not follow that rule.
Nowadays, it become a culture. It is allow and encourage to have sound when eating soba and even ramen. They believe that it can make them enjoy more on eating noodles.
It is not a ‘must’ on having sound when eating noodles. Main point is to enjoy your food.
Korea
The history of noodle is longer than that of bread, dating back around BCE. 6000 to BCE 5000 in Asia.
While noodles were eaten in Korea from ancient times, productions of wheat was less than other crops
Noodles did not become a daily food until 1945 in Korea

Buckwheat (memil guksu) and wheat noodles (milguksu) were specialty foods for birthdays, weddings or auspicious occasions
Noodles symbolize longevity and long life. So, that is the reason why a hot noodle dish
called janchi gooksu ( 잔 치 국 수 ) was served at Korean weddings traditionally
This is one of the noodle type served in a wedding
In Korea, a popular expression is “When are you going to feed us noodles?” This is another way of saying “When are you going to get married?”

divided into two big types:
Cool noodle dishes
Warm noodle dishes
• Suitable for summer to eat
• Always with no soup, being dry taste or served with cool ice
• Is always mixed with several ingredient, (spicy sauce , egg, or chopped kimchi)
• Always served with a big bowl
• With hot soup base

The most famous noodle in Korea Noodles with fried bean and meat sauce (韓式炸醬面 ) is fashionable in Korea.
It is not unfamiliar that in many Korean TV drama can see the artist eat the (炸醬面 ) always.

This noodle is invented by China Beijing in 1902. While a railway was building up, many China
Shandong peoples go to there and open up different types of restaurant.
They change the taste of the noodle for Korean . Then the Beijing (Noodles with fried bean and meat
sauce ) transform to the Korean style noodle during this past 100 years.

Why(韓式炸醬面 )famous in Korea? It is one of the cheapest food in Korea, but
delicious. It makes the(炸醬面 ) become a homely food.
It is easy to cook with simple ingredients. Korean loves to mix the noodle with pork,
cabbage, onion and potato. (and this kind of ingredients are most used in Korean noodle. )

Beijing Korean
• More vegetable ingredients
• More than 10 ingredients mix together with the noodle
• And the garnish is not cook with the noodle. Different ingredients will cooked independently.
• The noodle always based on the 3 ingredient(pork, cabbage, onion and potato) plus the main sauce(春醬 )
• All the ingredient will cook together in the same bowl.
The hobbit of eating noodles Korean always use the cooking bowl to eat the
noodle straightly when they at home.
Comparison Similar things
1) Both of three countries have Longevity Noodle on birthday and auspicious occasions which symbolizes longevity. Also it is a ritual that a piece of noodle has to be swallowed without cutting either by mouth or using a pair of chopsticks.
