In the field of microbiology, users are investigating the growth of microorganisms such as bacteria, fungi and viruses. Numerous microbiological applications are used in the dairy industry for the analysis of milk products (milk powder, yoghurt, cheese or milk).

1.1 Culture media

Microbiological culture media are used to detect microorganisms on surfaces and in sample material. In the following you can find a selection of nutrient media and media with different ingredients or characteristics for your laboratory applications.

In the microbiological lab, drying media and media are predominantly used for the analysis and determination of microorganisms. The special nutrient media in the form of granules by the manufacturer Merck have various advantages over other dry media. They are easy to handle hence to the good wettability of the granules with water - thus ensuring a homogeneous dissolution and mixing of the dry medium in the liquid. Furthermore they dust less and thus the BSE risk via inhalation of TNB can be signifi-cantly reduced. The high-quality culture media meet the established standards for microbiological product con-trol, food analyses or quality control in the pharmaceuti-cal and cosmetics industry.

Impact plates can be found within the framework of HACCP (Hazardous Analytical Critical Controlpoints) widely used for the examination of critical control points in the microbiological hygiene control of surfaces in production lines and equipment. The immersion culture media can also be used for testing the microbiological hygienic status of liquids. The variety of media on the plates allows the detection of many organisms. The containers are very suitable for the enrichment of anaerobic, microaerophilic or CO2-dependent organisms under oxygen-free conditions. They are characterized by their clear, thick-walled glass made of PVC as well as a robust, stable construction. Equipped with easy removable cover, O-ring seal and central locking. The germ count schuett count is used in the safe counting of bacterial colonies and phage plaques cultured on agar or nutrient discs. The manual colony counter has three different types of illumination and is designed for 90, 60 or 150 mm diameter petri dishes or nutrient discs. The device convinces by its high user friendliness and allows users to adjust the light intensity, counting sensitivity and volume individually. The modern LED light source goes easy on the eyes and does not fade which also allows an excellent transparency and differentiation of the colonies. The schuett count also has a black contrast disc for counting colonies when using light or dark agar. Test paper for the detection of lipases and esterases - exclusive production by Dinkelberg analytics.

The test method developed in the 1970s by Prof. Purr demonstrates the presence of lipase in dairy products and nu-merous other foods by means of discolouration on the test strip. In this method, an insoluble blue dye is formed on the filter paper with optimally running hydrolysis or lipolysis by esterases or lipases of different origin at the corresponding site of the enzyme activity in the respective medium.

The process has been decisively rewound in recent years, so that e.g. the reaction times have been shortened by a factor of four. The simple and fast handling of the test papers and the recognized, reliable detection of the lipase activities make the process for industrial application so efficient.

For the user. Extremely simple method is used to control the lipolytic spoilage of fats and fatty foods such as butter, bakery products, dried milk products and drying supplements. It can be used to detect a bacterial attack on raw materi-als, equipment or pipelines. There is also the specification for the lipase esterase test according to Prof. Purr in the food industry.

Shelf life: dry, well-sealed and protected from light, the test papers are stable for several months at a temperature of 2° -4°C.

2.3 Dry matter determination

In dairy labs, the determination of the dry mass of a sample is one of the everyday applications. The analysis of the FiTR (fat in the dry matter) is the most important prerequisite for the classi�cation of the products according to the cheese regulation and thus the guarantee of transportability.

The dry mass of a product is analyzed with the aid of sea sand, aluminum foil, �lm rolls and special scales and drying cabinets and provides information on compliance with the individual production steps and the desired quality para-meters of a product.

Light measurement (photometry) is the method for determining the concentration of coloured solutions by means of light. The infrared and UV light are used in wavelengths of 390 to 770 nanometres. 5.1 Dinkelberg equipment for the dairy lab

Dinkelberg analytics has been a close partner to numerous dairies since 1922. Altmann Analytik acquired the com-pany Dinkelberg analytics in 2014. Dinkelberg analytics is well-known for its laboratory equipment, which has been constantly optimized and improved for 40 years. These include above all the versatile water baths and innovative leak testers. In addition to the equipment, Dinkelberg analytics o�ers the right accessories as well as special designs for water baths and leak testers. In addition to standard devices, many devices can also be customized individually.

The water baths from Polypropylene (PP) were developed by the company Dinkelberg analytics in the 1970s and have proved themselves a thousand times. Advantages are the long durability, the excellent heat insulation and heat resistance and the flexible construction.

5.3 Autoclaves/Sterilizers

The term „sterilization“ refers to the elimination of all microorganisms with the aim of making a product absolutely free of germs. In this case, autoclaves are used as special steam sterilisers in which the water is sterilized under pressure by means of steam at temperatures above 100°C. They are ideal for temperature monitoring of products and processes in which a speci�c temperature is not to be exceeded.


6. ChromatographyIn the dairy sector, users are confronted with chromatographic applications. These include gas (GC) and high-perfor-mance liquid chromatography (HPLC). GC and HPLC columns are an indispensable part of modern analytical chromato-graphy and should be selected carefully, depending on the separation problem. Altmann Analytik o�ers probably the largest number of separation columns with suitable accessories.

6.1 Gas chromatography (GC)

Gas chromatography is used for the analysis of gaseous or highly volatile substances, which can be evaporated completely. The analytes can be separated by di�erent boiling points and distribution in the stationary phase (liquid �lm or solid). A septum is a membrane with which e.g. solvent bottles can be sealed in order to protect it against contact with oxygen, but at the same time it is possible to conveniently remove solvents via a syringe. In GC, various conditions are imposed on septa, such as low bleeding (outgassing of siloxanes) or high temperature stability. Depending on the application and GC apparatus, a suitable septum is to be selected.

6.2 Liquid chromatography (HPLC)

High-performance liquid chromatography, also called HPLC, makes it possible to split chemical compounds of sub-stances, even if they are present only in very small concentrations. This makes it possible for the user to know from exactly which components the sample being tested exists and the quantity in which they are present. For this purpose, an HPLC column adapted to the separation problem as well as the suitable solvent for the respective application are required in the lab.

6.4 Syringe �lters

Syringe �lters are essentially used for the �ltration of sample solutions prior to injection into the chromatograph. Injection syringe �lters are usually membrane or glass �bre �lters, which are available in sterile and non-sterile versions from Altmann Analytik. When selecting the syringe �lters, the highest quality of the analytical method should be taken with increasing sensitivity.
