Mrs. Mac’s Helpful Tips and Hints for Bakers

1. To test the freshness of yeast sprinkle a little bit overwarm water mixed with a pinch of flour and a pinch ofsugar. After 5-10 minutes the yeast should appearfoamy/bubbly, if not, the yeast is old and a new packetshould be used.

2. One 1/4 ounce (7 gram) packet of yeast equals 2 1/4 teaspoons of yeast.

3. Using milk in place of water in a bread recipe will produce a softer crust.

4. If a bread recipe calls for a specific type of flour and youdo not have it, you can substitute with unbleached, all-purpose flour. Keep in mind that your bread may not riseas well.

5. Use lukewarm water when making bread. Water that istoo hot can burn the yeast and water that is too cold willnot activate the yeast.

6. If the room you are baking in is too cold, cover the top ofthe rising dough with a clean garbage bag. It will keep theheat and moisture in the dough.

7. When placing the dough on a floured counter, fold yoursides in to centre of dough and top to bottom and thenflip seams to the bottom. This will help the heat to stay inand help it rise, making a fluffier bread.

8. Light salt can be substituted for regular salt as long as ithas potassium chloride and sodium.

9. For a soft crust after baking, smear butter over the top ofthe hot crust.

10. Always remove bread from pans immediately to a wirerack to cool, to prevent sogginess.

11. Never bag until completely cooled, to prevent sweating.

12. And finally, when all else fails drop by Kent’s Corners fora loaf of bread and a cinnamon bun too!

RECIPE CORNER

Aunt Shirley’s Cranberry Maple Chicken

4 large or 6 small chicken breasts (boneless)

1 can of cranberries (I prefer the whole berries)

1/4 cup of maple syrup

1/4 cup of water

salt to taste if desired

Spray a 11”x13” baking dish and lay the chicken out sepa-rately. Try not to overlap. Mix half the can of cranberries,water and maple syrup, and pour/brush over the chicken.Cover with foil for 30 minutes baking at 350°F. When time isup baste the chicken add the rest of the cranberries laying iton the chicken breasts. I stir the berries to break them up ifthey are to thick, use some of the juice from the meat to thin.Return to oven and bake another 30 mins. or until done.Baste again in between cooking time. I serve it with rice andspoon the juice from the dish over the rice.

WHAT AM I DOING HERE? Shut up, you crazy voices. I’mnot listening to you anymore. It was warm in the hostel, butthe voices were worse there, and somebody tried to steal myshoes. I’m freezing my ass here whenever I turn around onthis ground vent. Hell, it’s snowing and I have to pee. Ithought I saw Jesus in the hostel; then he turned into thedevil and came after me. I wish the voices would stop. Itmust be the medicine those stupid doctors gave me. Theymade me sick. I don’t need them. They can’t stop peoplefrom trying to kill me.

After the hospital I was okay until the landlord kicked meout. How could I pay him when I don’t have any money? Mychest hurts and I can’t get up. I must have been kicked whileI was sleeping here last night. Someone gave me a blanketand said something to me. What the hell was he looking for?It’s getting dark and my face is getting colder. The toquesomeone gave me doesn’t cover my ears.

God! My chest hurts and now my arm too. I’m gettingsleepier. If this were Calcutta, Mother Teresa would find me.She’s dead now. I read it in the old newspaper I found in thedumpster. She died the same week as that Diana princessdame. I don’t think that Diana would put her delicate handson the likes of me. Imagine that, when she died she got morepress than Mother Teresa, and what for?

I do alright. I know where the soup kitchens are, and where Ican scrounge the odd cigarette or bum the price of a beer.Those goddam voices again. Is the devil nearby? Screw himanyway. What can he do to me now? My family yelled at methat if I didn’t take my medicine I would end up in the gut-ter. This isn’t exactly the gutter – but it’s not very far. If theyweren’t all against me or if they had tried to understand theforces conspiring against me …. It’s too late now. I just wantto go to sleep. I just peed myself. It’s getting harder tobreathe. I just…want…to…sleep…..

Ontario Expands Access to Cancer Drug

More Treatment Cycles Now Funded for Colorectal Cancer Patients on Avastin

MIKE BROWN, MPP, Algoma-Manitoulin, has announcedthat Ontario is expanding access to Avastin for colorectalcancer patients who are responding well to treatment.

Ontario relies on a thorough assessment of scientific data andclinical evidence by its expert advisory committee of medicalprofessionals, the Committee to Evaluate Drugs and the Can-cer Care Ontario sub-committee, involving cancer experts,for recommendations on funding for all cancer drugs.

Working in collaboration with the pharmaceutical company,Ontario has been able to expand access to Avastin for tar-geted patients at a reduced cost.

“I am pleased that we can now make Avastin more availableto colorectal cancer patients. We remain committed to pro-viding more cost-effective medication for people in Ontario,and reinvesting our savings in new and better drugs foreveryone,” said Mr. Brown.

The Ontario Public Drug Programs will now cover the cost ofAvastin for patients who require the treatment beyond 16 cy-cles, if medical evidence from a physician indicates there hasbeen no disease progression.

The new criteria, effective immediately, will allow fundedtreatment of Avastin up to 24 cycles where previously themedication was funded for a maximum of 16 treatment cy-cles. Treatment with Avastin beyond 24 cycles could still beavailable on advice from the patient’s doctor or oncologist.

IN THE OLD DAYS ….

They used urine to tan animal skins, so families used to allpee in a pot & then once a day it was taken & sold to the localtannery. If you had to do this to survive you were “P-ss Poor”.But worse than that were the really poor folk who couldn’teven afford to buy a pot. THEY “didn’t have a pot to p-ss in”and were the lowest of the low.

The next time you are washing your hands and complain be-cause the water temperature isn’t just how you like it, thinkabout how things used to be, back in the 1500s:

Most people got married in June because they took theiryearly bath in May, and they still smelled pretty good by June.However, since they were starting to smell, brides carried abouquet of flowers to hide their body odour. Hence the cus-tom today of carrying a bouquet when getting married.

Baths consisted of a big tub filled with hot water. The man ofthe house had the privilege of the nice clean water, then allthe other sons and men, then the women and finally the chil-dren, last of all the babies. By then the water was so dirty youcould actually lose someone in it. Hence the saying, “Don’tthrow the baby out with the bath water!”

Houses had thatched roofs - thick straw, piled high, with nowood underneath. It was the only place for animals to getwarm, so all the cats and other small animals lived up in theroof. When it rained it became slippery and sometimes theanimals would slip and fall off the roof. Hence the saying “It’sraining cats and dogs.”

There was nothing to stop things from falling into the house.This posed a real problem in the bedroom where bugs andother droppings could mess up your nice clean bed. Hence, abed with big posts and a sheet hung over the top affordedsome protection. That’s how canopy beds came into exis-tence.

The floor was dirt. Only the wealthy had something otherthan dirt. Hence the saying, “Dirt poor.” The wealthy hadslate floors that would get slippery in the winter when wet, sothey spread thresh (straw) on the floor to help keep theirfooting. As the winter wore on, they added more thresh until,when you opened the door, it would all start slipping outside.A piece of wood was placed in the entrance-way. Hence, a“thresh hold.”

In those old days, they cooked in the kitchen with a big kettlethat always hung over the fire. Every day, they lit the fire andadded things to the pot. They ate mostly vegetables and didnot get much meat. They would eat the stew for dinner, leav-

ing leftovers in the pot to get cold overnight and then startover the next day. Sometimes stew had food in it that hadbeen there for quite a while. Hence the rhyme: “Peas por-ridge hot, peas porridge cold, peas porridge in the pot ninedays old.”

Sometimes they could obtain pork, which made them feelquite special. When visitors came over, they would hang uptheir bacon to show off. It was a sign of wealth that a mancould, “bring home the bacon.” They would cut off a little toshare with guests and would all sit around and “chew thefat.”

Those with money had plates made of pewter. Food withhigh acid content caused some of the lead to leach onto thefood, causing lead poisoning death. This happened mostoften with tomatoes, so for the next 400 years or so, toma-toes were considered poisonous.

Bread was divided according to status. Workers got the burntbottom of the loaf, the family got the middle, and guests gotthe top, or the “upper crust.”

Lead cups were used to drink ale or whisky. The combina-tion would sometimes knock the imbibers out for a coupleof days. Someone walking along the road would take themfor dead and prepare them for burial. They were laid out onthe kitchen table for a couple of days and the family wouldgather around and eat and drink and wait and see if theywould wake up. Hence the custom of “holding a wake.”

England is old and small and the local folks started runningout of places to bury people. So they would dig up coffinsand would take the bones to a bone-house, and reuse thegrave. When reopening these coffins, 1 out of 25 coffins werefound to have scratch marks on the inside and they realizedthey had been burying people alive. So they would tie astring on the wrist of the corpse, lead it through the coffinand up through the ground and tie it to a bell. Someonewould have to sit out in the graveyard all night (the grave-yard shift.) to listen for the bell; thus, someone could be,“saved by the bell” or was considered a “dead ringer”.

And that’s the truth...Now, whoever said History was boring!

Algoma U begins partnership withNorthern Ontario Med School

ALGOMA UNIVERSITY AND the Northern Ontario Schoolof Medicine recently signed a collaboration agreement, whichwill allow the institutions to co-operate in their research.

“The partnership ... creates the opportunity for a future of ex-citing research initiatives,” said AU President Celia Ross. “Wehave a unique opportunity to have new conversations, explorenew research possibilities, and to share skills, resources andexpertise — all in the interest of the people we collectivelyserve.” With the collaboration agreement, Algoma Universityis now in a better position to grow academically, somethingthat will ultimately benefit the entire community.

Other recent developments at Sault Ste. Marie’s university in-clude a new $16 million Biosciences and Technology Conver-gence Centre and the 2008 granting of the school’sindependence.

Santa’s Stories for ChildrenTHERE ARE DAYS, WHEN I AM SITTING quietly alone bythe fireside, I often think what do people really think of me?Now I want you all to look at me and ask yourselves, do youlike me? Do I look jolly? Well, I hope the answer to thosequestions is YES! During these quiet moments I also get verynostalgic, and I remember a time long ago when, as a littleboy I was not jolly at all! In fact, I was so unhappy because Ithought I was never any good at anything! As hard as I tried,I was never top of the class, I was never picked for the foot-ball team, and I couldn’t even run as fast as the other boysand girls.

One day, feeling very unhappy and sorry for myself I decidedto take a walk, on my own, to the enchanted forest. Feelingever so miserable, I walked with my head held down, handsin my pockets and stubbing my toes into the ground whensuddenly I saw a beautiful robin red breast, lying still in thegrass. He had a broken wing poor fellow, “oh, you poorthing” I said softly as I picked him up gently. “Where do youlive little robin? Tell me and I will take you home immedi-ately.”

The robin looked at mesadly and said “ I live in thecastle at the end of therainbow.” Just then, a beau-tiful rainbow appeared inthe sky, a perfect arc madeof the colours red, orange,yellow, green, blue, indigoand violet! There were 7colours in all, and do youknow how I remember them? In school I was taught a phrasewhich goes like this:

Now I may have thought of myself as an unhappy lonely boywho was no good at anything, but even then I always wantedto be kind and helpful, and so with little robin red breastcradled safely in my hands, I started to follow the rainbow.For miles I walked, up hill and down dale, across rivers andthough valleys until daylight passed, and the sky started toturn dark! Suddenly, in the distance there it was, a beautiful,magical castle perched high on a hill, surrounded by Christ-mas trees whose twinkling lights seemed to dance in themoonlight! At last I had found the end of the rainbow!

I walked up the hill in wonder at the beautiful and enchant-ing sight before me, hardly believing my eyes, and pushedfirmly on the huge golden gates at the entrance of the castleuntil they opened wide as if they were expecting me!

Imagine my surprise when, as if bymagic, the little robin flew out of myhand, his wing no longer broken, andperched on the branch of a tree. Stand-ing next to the tree was the shadowy fig-ure of an old man, and as I lookedcloser I realised it was Old Father Time!

“Welcome little Santa” he said in a kindbut firm voice, “we have been waitingfor your arrival for a thousand years,and tonight you have proved to us, withyour kindness, that you are the truespirit of Christmas!”

“But I am just a sad, lonely little boywho is not good at anything” I ex-claimed rather forlornly!

“That is nonsense” came his reply,“what is more important is that you aregood at being good. You’re are a kind,thoughtful little boy, and from this dayforward, you will be known as SantaClaus, the spirit of Christmas, and

everyone will love you, and believe inyou.”

For the first time in my life I felt good,and happy, and it didn’t really matterany more whether I was the fastest orthe cleverest, what really mattered wasthat I would always do my best to begood to others.

Although this happened many yearsago, whenever I feel sad, or that perhapsI am not good at anything, I rememberthe kind words of Old Father Time,when he told me “you only have to begood at being good” and I realise I amgood at what I do best! I was remindedof this yesterday when someoneshouted after me, “hey Santa, you arethe greatest guy on the planet!” towhich I replied, “there is a Santa in allof us, all we have to do is find himwithin our hearts!”

So, next time you see a rainbow,remember my story, and try to find thegoodness of Santa within your ownheart.
